I need to onow why he put the hot dogs on the scewers and took them out? He could have just placed them in the slots. What am I missing?

He never dignified anyone with a response because he knows what he is doing. I figured it out, too. No skewer, hot dog will curl during cooking. He wanted to keep the hot dog from doing so. He's got it going on upstairs.

I love at 7:48 where you can see that the charry tomato rope thingy is clearly too long to wrap around the rose of prosciutto, but they cut the shot to make it seem like it was the perfect length. They do a lot of these types of tricks (cutting out footage to make the video shorter / to make the recipe seem a lot easier than it actually is) but this example is the most noticeable.
The main reason they (and a lot of other trendy cooking videos like these) have cuts like that is to hide the process of correcting imperfections, and over simplify the recipes. But with over simplified recipes people are more likely to run into errors when cooking for themselves, especially with these batshit insane ideas from the stoner minds over at chefclub
at 3:00 you see a barrel of a rifle that they forgot to edit out. these people are being held at gunpoint and under intense duress to make obscenities beyond mans comprehension.
