you may consider choosing i7 and above cpu (Intel) with minimum 10th gen if you want to do decent video editing like short videos, not much animation, etc.. if you're a person who likes amd CPUs than Intel so I've heard that they're almost the same so you could surf online about it as per your preferences as I don't have much knowledge about amd CPUs 😅.. and if you're a advance video editor, can edit videos like ali abdaal by creating animations, multiple layering, upto 4k editing then you may consider getting i9 12th gen minimum so editing could be smooth enough P.S: These are my suggestions, this doesn't mean that you need to buy from above mentioned cpu types, you can look up online and get one for your needs

Outsourcing is the best option, find some editor that will maintain the quality standards that you are offering
You can try increasing the prices if you are overbooked.
Or Outsource some of the work to freelancers and maintain good profit margins
