    😋 made mine with kraken to steep and top up. Used Demerara syrup. Turned out great and getting better day by day. Lots of vanilla and allspice. A little goes a long way. Now to wait for the next instalment. 🤤

      Stephane Foisy Do you like Kraken more than other Spiced rums you’ve had? It seems so sweet to me, but I’m not sure if that’s normal for Spiced rums. Haven’t drank many of them 🤔

      @@matthewgodwin4626 Most spiced rum (or rums in general) are sweeten (sugar added). I like Kraken as it actually has some good spices, Oakheart is another. I find Sailor Jerry or Captain Morgan spice very plain rum. When I use Kraken in a cocktail I tend to use a teaspoon or so less of syrup.

    I applaud the addition of Appleton to this fine liqueur!
    Likewise choosing brown / demerara sugar instead of white sugar just makes sense.
    I love making liqueurs and cordials so thank you very much for this recipe. ( plus I can't get Allspice Dram here either! )

    Wooo finally i found a good vid on allspice dram!! My question is how much appleton did you put in there, because topping the bottle is not gonns be the same for everyone.
    It’s gonns take some time but i surely am gonna love this :D

      The bottle I used for the allspice dram was a 750mL/26oz bottle. Topping it off with Appletons was simple. I just filled the bottle to the top with the rum once the other ingredients had been added. I used about 355mL/12oz give or take of Appletons. I'm sure you will love the allspice dram. Cheers!

      It was an empty whisky bottle. Bearface 7-Year-Old Triple Oak Canadian Whisky to be exact. Cheers!

    Great call on using the 12 y/o Appleton’s 👍. No point in putting in 2 weeks and all the expense of the spices etc and then kill it by pouring a shitty rum over it

    I'm wondering if you could use the allspice dram as a basis for bitters
    I'd love to see homemade bitters on the channel
    not sure if there's anything on patreon, so I might subscribe if there is

      Allspice dram would be an excellent base for bitter. I haven't made any bitters on Patreon yet. It is on my to-do list in the near future. I've been experimenting with Apricot bitters, Maple bitters, and Strawberry and Elderberry bitters. Cheers, Nicholas.

    Brown sugar only makes sense for this drink. It's rummier.
    Demarra maybe moreso.

      Brown sugar has such a great taste. Obviously, it can change a drinks profile. One must be discerning when choosing to use brown sugar in a cocktail. I have to say it's awesome when you carmelize it for something like a hot toddy or even mulled wine. Happy experimenting!
