Awesome 👌 i make tomato cubes by grinding tomatoes and cooking them with salt and oil and use during the week ,i also make pudina chutney cubes for the week. While making masala vegetables like bharva baingan i use lasun chutney (which consists of peanuts ,garlic and dry coconut, chilli powder and salt) in these vegetables, saves a lot of time and tastes almost similar .

Do not stir the butter while making the ghee, it will not give granules , keep the butter and once the bubble stops you can strain it and keep it aside do not even touch it or move it. See next day it gives you perfect crystal ghee

I collect milk cream and make butter and ghee as we consume both. While making ghee I stir a lot to scrape the sides and bottom for milk residue. I add less than a pinch of salt at any point when its boiling to get the granular texture. It was good to hear about the 3flip technique to make phulkas. Nobody taught me this but I figured it out myself after lots of trial once I started cooking after marriage.
