Homemade Key Lime Pie From Scratch

In this video, I am making a delicious Florida Key Lime Pie completely from scratch. The cool thing about this pie is that it is truly one of the easiest pies to make, mainly because it uses a crumb crust which is much easier to work with than regular pie crusts and makes for a great seasonal summer time dessert. It also bakes in much less time as well. I go through the process of making the crust, the custard filling made from sweetened condensed milk, egg yolks and lime juice. And how to properly make a whipped cream topping. I also like to make a sauce with this pie, so I am including a very easy Mixed Berry Coulis in the video. I also go over the different types of limes, and pros and cons of each one. And as a bonus, a brief bit of history behind this beloved dessert. Ingredients in the Pie Crust:
2 Parts Graham Crackers
1 Part Sugar
1 Part Melted Butter
Pie Filling Ingredients:
1 Can Sweetened Condensed Milk
2 Egg Yolks
1/2 Cup Lime Juice, preferably fresh limes
Zest of 1 Lime
Pinch of Salt
Mixed Berry Coulis Ingredients:
8 oz. Frozen Mixed Berries
1-2 oz. Sugar
Pinch of Salt
Whipped Cream Ingredients:
Cold Heavy Cream
Confectioners Sugar
Dash of Vanilla Extract

The only thing about Key Limes is that they are really small and kind of a pain to juice and zest compared to larger ones, but you can tell the difference in the taste. I am able to find key limes at the farmers market rarely, so that's when I am being divinely inspired to make this pie 😇😇😇

Ya they're hard to come by, and even nearly impossible in some areas. It is truly one of the easiest pies to make though. The lime juice partially sets the egg yolks so very little cooking is required. so many people overcook these things.
