Just learning how to do the black garlic was worth the watch alone. There are so many applications for black garlic that I would love to try for the holidays.
A black garlic and thyme schmeer on a prime rib roast smoked with post oak!!! Now who wouldn’t want that for a holiday centerpiece???

Totally, that would be awesome! The great thing is that black garlic is both water soluble and oil soluble. It'll act like an emulsifier, so literally the options are limitless.

Man! $42 for a full brisket is a GREAT price. (and for black Angus no less!) Here in Oregon the best price I can find is almost double that.
I've switched over to chuck roast for my corned beef, but nothing beats a brisket when it comes to 'Texas style'. I guess I'll have to wait for prices to come back down. _(or marry a ranchers daughter!)_ 🤣
BTW? You've sold me! My next pork butt will be a 'black garlic pork butt', but this time I'll have to settle for 'black garlic butter' on top when I reach the stall and do a 'Texas crutch'.

Can you use regular roasted garlic if you don't want to or can't make black garlic?

Absloutely! I would hold back the amount a little, but totally!

Great lookin brisket. I didn’t know you could make garlic like that and most importantly...was that an ammo can blower I saw?

Haha thanks! Ya I found an old 25cfm fan and built a blower out of an ammo can, lol. Built the PID controller too.
