    As a person from Kolkata, this is legit. No street food vendors would add that mint chutney (to keep costs down) but that sauce slaps while having kebabs. Really liked the addition of the sauce in the roll. Also the egg roll technique and the parchment paper addition is really authentic.

      Don't know about kolkata but in delhi, mayo is usually a staple and works really well too instead of the mint chutney. Kathi rolls were my go-to breakfast and lunch for months during college. Good times.

    Found this channel and thought it was another generic pretentious foodie TH-camr. Oh how wrong I was. The way you make these seemingly difficult recipes so simple that anyone who wants to can make them is incredible. The diversity of food and the credit of where they came from is awesome too. My family and I don’t have a ton in common outside of our enjoyment of trying different things. Made the Halal Guys chicken and rice and it was an absolute hit. This will be the next one I make when we are all together. Keep killing it, Ethan!

    I'm honestly excited for Ethan to be trying more Indian recipes.. I love his dedication to keeping things simple but still very close to authentic, and still packing tons of flavor. you and Adam Ragusea have changed my whole approach towards cooking.

    I liked the little bit where you mention that you clean the bowl and cutting board while the food is in the oven. As someone who often makes huge messes while cooking, I would love more bits like that. Finding out when to clean everything else up is arguably part of the technique!

    Made this for the family tonight. Never made or even seen paratha before. Four of us raved about how good it was, and we aren't a family of ravers. My 11yo vegetarian loved the egg version. Both kids went back for seconds. I had to make an extra batch of sauce for lunches tomorrow. Thanks for another great recipe!

    Guy casually drops possibly the easiest AND most delicious chicken thigh recipe I've ever seen. Like genuinely, it just looks so easy. Chop, mix everything in one bowl, dump everything into a sheet pan, broil. Really nice touch with the sliced cucumbers too to add some freshness.
    Do you mind dropping the caloric breakdown of the chicken if you have it?

    just wanted to say i've been a fan of the channel for a while, pickled onions changed my life, but what just hit me now is that damn Ethan your camera & editing work is on point. i guess the whole idea with good editing is that you aren't supposed to notice it, so even more credit to ya that it took me this long to think about it, anyway thanks for sharin' the good recipes and good vibes, easily top 5 cooking channels on youtube imo.

    i'm of indian descent and i just wanna say that i wouldn't even care if this is "authentic" or not. no one is obligated to cook exactly like kolkata street vendors. it's okay to make your version your way because that's the reality of indian food even in india.

    Well, i just tried this and it really tasted amazing. I cooked all the chicken and my family just "tasted" one piece of chicken. The result, i just ate two rolls, and they ate all the remaining chicken, just by itself lol.
    Good content as always Ethan, it's really precise, short and a real good authentic recipe.

    i have lived in kolkata for more than 16+ years and i can definitely say that kolkatan cuisine is incomplete without rolls, and your technique to wrap them rolls is absolutely original and a wonderful nudge to the street food of kolkata

    Just made this for dinner and adding it to my repertoire. Definitely encourage marinating for a few hours since the assembly and chopping takes a long time when you're hungry. I also modified this by serving it pizza-style on a garlic naan (the closest bread substitute I could find).

    Kolkata Kathi Rolls have a cousin in Delhi too. Difference being the addition of a mayo based sauce or using a chicken dish with a thick creamy gravy, a perfect amount of sauce is used, not too much and not too little, it makes or breaks the rolls . If you like your Chicken creamy then Delhi Kathi rolls are also worth a try. I genuinely appreciate your inquisitive nature and interest in Indian food, the most underrated cuisine of all time!

    When I got to college, or maybe after college because I wasn't exactly going to dinner parties at that point, I was always confused when an American friend said that what they were cooking was being served with chutney but then they served something that seemed essentially like salsa or relish. This all has been much more my speed.

    There's also great mutton versions of these amazing rolls. Every time I'm up till 3 working, this is my go to meal. And not just for me, also for the odd 200 million Indians who do eat non veg.
    And for those 1 billion who don't, there are no egg paneer and masala potato preperation for these.
    In the street food format, it probably takes less than 90 seconds for the guy to cook and assemble.
    It feels amazing to see someone finally cover these. Hats off Ethan. Respect++

    Made this today, the parathas are outstanding on their own and the Kathi rolls are to die for. Frankly, the marinated chicken I could eat by the fistful on its own. The chutney was maybe a little hot for my tastes but definitely didn't put me off. I will use a couple fewer chillies next time. And there will definitely be a next time. Thanks for showcasing such approachable recipes. I have made a few of your recipes now and none of them have disappointed.

    Since this is Indian food and as an Indian from a vegetarian family, I must say egg is not considered vegetarian for Indians. Besides that, awesome work!! Looks legit and scrumptious

      It is NOT an indian good alone, it's also pakistani and bangladeshi and tunisian and very known in traditional Mediterranean cuisine

    I absolutely love the attention you give to Indian food.
    I always thought Americans never knew what Indian food was since I never saw it on American TV and I have never found an American cook (other than you) on TH-cam ever do Indian food (aside from the notorious Tikka Masala).

      @@PastelKenshi When I say 'Indian' in the context of food, I refer to the Indian subcontinent as a whole - not just India.
      If I wanted to get specific, I would use the region names like 'Punjabi' since that has far more meaning in the context of cuisine than Indian vs Pakistani.
      Personally, I would say the differences within the Indian subcontinent is actually less than the differences within the Mediterranean. I don't consider Italian and Greek food to even be remotely similar.

    I've had one of these rolls with butter chicken in it and my god they were absolutely delicious.
