Chillo Frito (Fried Red Snapper) - Easy Puerto Rican Recipe

  • There's nothing better than fried seafood by the ocean! And while we can't bring the ocean to you, we can show you how to make this classic Puerto Rican seafood dish. So we're going to show you how to make fried red snapper.

    Ingredients:
    Whole Red Snapper (2 fish, about 1 lb each)
    Season with:
    Adobo
    Black Pepper
    Coriander
    Dredge:
    3 tbs all purpose flour
    3 tbs corn starch
    3 tbs corn meal
    2 tsp adobo
    Mojo:
    2 lemons, juiced
    2 tbs olive oil
    1 tsp salt
    2 tbs fresh cilantro
    Tostones:
    3 green plantains
    1 cup water
    1 tsp adobo

    *Happy New Year* That looks Delicious! Tip: When buying whole fish a good way to check for Freshness! is Clear! White eyes. I noticed your snappers eyes were Blood Shot. Look for firm to the touch, clear eyes and no fishy smell.... Good Luck! 🐟

      Whoo!! Good luck, I'm sure its going to be awesome! If you can't find snapper, this method should work with almost any whole fish that is about the same size (or bigger if you have a bigger pot). What you can find will depend a little bit on where you live; freshwater fish like crappie or trout could do well; also tilapia is often easy to find and would work.
