How to Process Cling Seed Plums (and a recipe for plum sauce/syrup)

  • Plums can be abundant in the summer, but removing the seeds can be a major chore. Here's how to do large amounts quickly, so that you can then turn your plum pulp into jam, fruit leather, Asian plum sauce...whatever you like.
    My recipe for this plum sauce was 2 cups sugar, 1 tsp each of cinnamon and cardamom, 1/2 tsp each of black pepper and allspice, and a tsp of orange extract. This made 14 pints. You can adapt this to your taste as the plums are so acidic that they can handle more or less sugar and spice as you like.

      If translation of question is right, no glass will not crack. Special glass made for this purpose.

    I’m in zone 7A Northern California-I have 2 x Santa Rosa plum trees and we are overloaded with them every year, they don’t get very big ! I’ll try your tips , so thank you 😊

    What if some plums have maggots inside, and you don't cut the plums open to identify them? I found that the flesh can be scratched off the seeds using a mixer.

      Well, then you're gonna be eating a few insect larvae. Cooked of course. Likely harmless. But definitely an ick factor.

    What do you do if the pits are shatterex?

      I don't find that they usually shatter. But if they did, I'd either send the mixture through a finer setting on the food mill to sift out the shells, or just keep stirring and removing them. I've never had it be an issue.

      @@Honeybee-Hedgehog-Designs perhaps a different type of plum. I'm so sorry. I've literally never had this happen. The alternative would be to to a jelly, and just put the pulp in a jelly bag and let it drip. Different product, but guarantee of no shells.

      Seems like if it's something that might be an issue for that particular plum variety, you could just add a step of cutting open the plums to check for that before putting in the pot on the stove. It would add some processing time but also some piece of mind.
