- This is THE easiest thing to can. If you’re a beginner, it’s the perfect “first thing” to can.
I love canning water for long-term storage because it lasts much longer than bottled water. Being prepared is always a good idea, right?
Note: it’s ok if you see particles or sediment in your jars after canning your water. That’s likely just minerals in the water.

I live by a spring fed river and have a wonderful well with a 1500 gallon storage tank that I can pull the lid on and draw from in an emergency. :)

I live in a northern climate with no storage.
Do you have any knowledge if the water in the jars froze with a 1inch head space if it would break the seal on the lid?
I honestly don’t know. I would think that it would expand and break the seal, but I’m not experienced in super cold climates. You could always try a small batch (or even just 1 jar) and see what happens. I’d love to know how that turns out if you do try it.
It would absolutely bust the jar if the water freezes..
why wouldn't you store it below frost level?
Glass can break/shatter when it freezes, especially if the jar is sealed tightly.
Storage is and issue specifically if you cannot atack

Would you describe the process that's taking place which allows for the long term storage of water from a technical point of view? Forgive me for saying this, but it just appears that you're putting water into jars. Is it the steaming pot process which affords the water jars a special seal, or something like this? Just curious.
Yes, so let me try to explain.
If we just threw water in jars and set them aside, microorganisms would eventually ruin the water. The steam canner works like a water bath canner. Heating the water in the jars brings the temp up, and that temp kills microorganisms that can cause spoilage.
(Canning water is no different than canning other foods). Canning in steam or water bath (or pressure canner) results in the lid sealing, which is imperative for food safety.

Hello, I have used canning jars to "store" liquid before, like milk, and the lid area seemed to rust. Does this happen with actual steamed canned water? Thx
Hi! If you’re not actually “canning” and just storing, I’d recommend getting the Ball reusable lids that won’t rust. (I get mine at WalMart).
When i actually steam can items, there isn’t rust inside the lids. I always use new lids (I don’t reuse them). Also, after canning and cooling, I remove the outer ring to verify that the seal is good, and if so, rust shouldn’t be an issue.
