How to create a luxurious wedding cake at home with our guest Sophie Page

TIPS FOR SUCESS
I like to work with margarine instead of butter. I
find it gives great results without the greasy
smell. Plus, it’s cheaper and comes in larger tubs
Line your tins before you start and don’t allow
the baking paper to be higher than the tin
itself Read through any recipe fully before beginning
Invest in decent tins. If you’re going to
be baking regularly, you need sturdy,
deep, straight edged tins and 4 of each
size for optimal baking. Scrape the bowl down with the rubber spatula
occasionally to ensure the beaters incorporate all the mixture.
Honey, Orange and Pistachio Cake
*Ingredients
350g baking spread( Stork or Tesco work well)
350g caster sugar
7 medium eggs
350g plain flour
2tsp baking powder
25g pistachios, blitzed to form a coarse dust
2 oranges
Fillings:
110g margarine or butter
380g icing sugar
50g white chocolate
dash of milk
40g pistachios, blitzed

Method
Lightly grease and line 4, 6"cake tins with parchment paper. Preheat oven to 170C.
Cream the fat and sugar on high speed until smooth. Scrape down half way. Meanwhile, combine the flour, baking powder and nuts in a jug. Crack eggs into a separate jug. Turn mixer to low and simultaneously add the flour mixture and the eggs until fully combined. Zest the oranges and fold in distribute the mixture between the 4 tins and bake for appx 28 minutes. Allow the cakes to cool in their tins before turning out onto wire racks. Place margarine into mixing bowl and fit the balloon whisk. Break down the fat for a few moments. Break up the chocolate and place in a bowl with the milk in the microwave for 1 minute on full power. Stir to combine. Add the icing sugar to the margarine, mix on slow until combined, then add in the chocolate and whip until smooth and creamy. Level off the tops of the cakes & squeeze orange juice all over. Spread 1/3 of the buttercream over, sprinkle with nuts and drizzle with honey. Repeat until fully stacked
