  • The simplest and most delicious Laotian style appetizer!
    Ingredients:
    Rice crackers: 500 grams
    Water: 1/2 liter
    Sugar: 150 grams
    Fish sauce: 5 tbsp
    Fermented fish sauce: 1 tsp
    Minced pork: 200 grams
    Fried shallots: 150 grams
    Fried garlics: 150 grams
    Lettuce: 200 grams
    Betel leaves: 200 grams
    Sliced cilantro: half a bunch
    Sliced lemongrass: 7-10 stalks
    Sliced tomatoes: 2 pcs
    Roasted peanuts: 50 grams
    Roasted chilis: 20 pcs
    Directions:
    Pound or food process rice crackers finely (If you do not have this ready, you can always make it yourself. Using leftover sticky rice, sun dried them for several days to be dried completely and deep fried in a hot oil for about 5 - 10 mins or until golden brown).
    To make the stock: in a low heat, add sugar and melt them into a dark brown color, add salt, fish sauce, fermented fish sauce and water then bring it to a boil. Add minced pork (bigs balls). Set the broth and the pork aside or until cool completely.
    Process fried shallots and fried garlic finely as well as process minced pork and set aside.
    Mixing: Add the dry ingredients first - rice powder, ground shallots/garlic, minced pork and then mix them together until combined and then add then gradually add the stocks until they are all gone.
    We usually serve the rice paste with sliced lemongrass, sliced, tomatoes and sliced cilantro with lettuce and betel leaves for wrapping; along with roasted peanuts and roasted chilis.
