That's how I remember it too, sous meat or Hog head cheese as it's known. My grandmother was from the South and she would boil pots of sous and then pour them into several pans and let them solidify into the sous that we kids grew to love. When she passed away, I stopped eating pork altogether, that was about 36 years ago.

I think isnt an old recipe as yours requires lipton mix and potatoes? . Im a country boy from the southern NC and its the fat that makes it good. Souse without your Apple Cider vinegar and pickling spices..isn't Va or NC souse
