What a delicious looking and simple recipe! We try to eat vegetarian 2-3 times a week and this looks like it will fit the bill perfectly. As soon as our weather cools off a little I'll be giving this a try.

Any roasted veg is amazing. I often roast cauliflower & broccoli together & top with shaved parmesan. This soup is a perfect dinner for fast approaching Fall weather. Thanks, you guys.
Question, Kevin. Do you always roast half and boil half of the cauliflower for this soup? I wasn't sure if you were doing that just to educate how each is done or if it added something to the soup by having both.
Hi Adam - you can either boil or roast all of the cauliflower. I find that roasting it all creates a stronger flavor and that boiling it all can have an opposite effect. But that's my taste - experiment and see what you like best! Bon appetite!

Here is one of my favorite ways to serve cauliflower. One head of cauliflower chopped and roasted with 3-4 carrots chopped. (450 for 30 min). Mix the roasted veggies with raw chopped green onions, chopped red & yellow pepper, 2 cups of cooked quinoa or coucous. One can of garbanzo beans drained. Mix everything with a homemade vinegrette, and add salt and pepper to taste (for an extra "kick" add hot pepper sauce to taste. Serve on a bed of arugula and spinach. Easy to make and delicious.

Looks great! Sometimes I add a large white potato with the boiled cauliflower and it adds a nice thickness instead of adding milk.
