    Just ordered a Presto digital canner for under $300. So excited about canning our venison! I learned last year about grinding our meat. From harvest to table we do it all ourselves. What a blessing!

    Nice video. I can venison every year. Raw pack with a beef bullion cube & 1/2 tsp of sea salt. The end result tastes like the most tender beef. My son loves to open up a pint, add some bbq sauce and microwave for quick bbq sandwiches. Also perfect for stews and chili.

      Pulled deer meat bbq sandwiches are great, deer tips and noodles thrown into a pot with cream chicken soup awesome , use it in chili makes a hearty bite , beef stew with it makes quick meal ,hell I grew up eating it out of the jar with a fork

    My boyfriends grandparents gifted us canned venison. Now, I’ve had venison before but they gave us a more aged can. And I’ll tell y’all it’s very scary looking in the can the older it gets. It really does seem gross coming out the can too. But you cook it, and it’s more like pulled pork that tastes like tender venison. We don’t even season it and god is it amazing😊 if you do want to season it some onion powder is all you need. I’ve tried adding all sorts of stuff, but really it’s best on its own. Especially with mashed potatoes

    How high was the water on your jars when you put jars into the canner? Was water pre heated?

      The canner I was using (All American) has that there should be 2-3 inches of water in the canner. Check your own pressure canner instructions for what is recommended if you have a different canner. When I put the jars in, the water was just warmed a little bit. You don’t want it really hot or boiling already or it could cause the jars to crack.

    Ok I'm going to be trying this for my first time is it ok to add other flavor (seasoning) to the meat in place of salt? Nice video by the way.

      Yes, you can add other dry seasonings. Also when pressure canning you don’t have to add salt at all if you don’t want to. It’s not necessary for preserving the meat. Appreciate the compliment. Enjoy having meat on the self instead of it all in the freezer!

    Could this be done in something like an instant pot pressure cooker under high pressure?

      I would not recommend using an instant pot. You should really use a pressure canner similar to the video. My wife knows more about this than me but I believe it has to do with achieving the right temperature, pressure and time combination.

    Actually, you CAN water bath canned meat. Do you really think our great grandparents had a fancy $600 pressure canner like you do?

      No, but people also used to not wear seatbelts and smoking was considered safe and we found how bad those are. There is a difference between using the different types of canner’s because of the foods ph level. Meat should be canned in a pressure canner because water bath canning doesn’t get the meat up to the proper temperature to kill botulism spores. Then you run the risk of botulism if it isn’t canned properly. Not worth the risk to me nor am I going to tell the general public that you can do that when you shouldn’t. You should probably do a Google search about why to pressure can meat. Times change and we learn more and get better ways to do things, like canning, so you don’t run the risk of making yourself or your family sick. So again I say it is NOT RECOMMENDED to water bath can meat and there are lots of articles out there backing that statement up. Try reading this article from the National Center for Home Food Preservation. It says it in the first sentence. nchfp.uga.edu/how/can5_meat.html#gsc.tab=0

    That "can" is a jar. You're not canning venison. You're jarring or bottling venison. 😊
