  • As coffee roasters, we understand that we can only roast a coffee to the potential of the green coffee itself. In many cases, we're doing our best to try to maximize the potential of each coffee and minimize the loss it may go through in the roasting process. That being said, starting with quality, fresh green is plays a vital role to roasting good coffee. In this episode, we specifically talk about the impact aging can have on your green coffee.

When I lived on the coast, I had a 68’ Austin Healy that (when it rained) would fill with water..so I know that stale musty smell. 😂
Great topic, and came at the right time. Fresh is definitely best! Thanks, guys. 🍒✌🏼

Haha yeah it's not a great smell or taste.

I was going to saw Feran has a guide on rehydrating coffee.
I’ve gotten vibrancy out of a coffee that was really muted and starting to taste some age. Maybe not saved, but a lot of life was brought back.
Am interesting idea…. If a coffee is past its prime and tastes old. Selling/ sending samples with other bags, so that people can taste what old coffee tastes like.

You've tried it? That's excellent. We may have to run an experiment for fun and see what's possible.
Oooh.. that would be a neat idea. You could even freeze a roast with it just fresh off harvest and then ship a new roast that was done when the coffee has aged. This is an interesting idea!

    Great conversation on this topic!
I think it’s hard to describe old green until you’ve tasted it.
I have a roaster near me that told me they keep past crops in their blends to keep their cost down. Yet their retail price is upwards of $18 for 12oz.
I have a hard time supporting them with this knowledge.

Definitely hard to describe old green. You need to just taste it haha
Yeah that's unfortunate. Also probably why blends get such a bad rep when they could be really tasty.

Where is the best place to source green coffee as a complete new start-up? Looking to research prior to setting up in the Uk

We're not sure what importing companies you have access to in the UK so we can't answer that well
