You would have to do more than one a week to catch up with him and even then, that will take you quite a long time lol. Very much worth going into though. Tommy is very friendly and appreciative of reactors. He is buddies with OldSkuleNerd and he has physically sat in on a reaction to his own music in Sabaton with GIvenToe and even featured him in his cover of This Is Halloween, from The Nightmare Before Christmas. The one octave challenge was, I think, more of a gimmick on Tommy's part. It was an octave higher than the original. You ask about other songs by him: "She`s gone" by Steelheard is his most successful song on TH-cam. I personally also like his Gary Moore covers, for example "Over the Hills and far away".

You have just scratched the surface, there is only one instrument that I have discovered he does not play (there may be more) and he tells us what that is in "Cotton Eye Joe". Some of my favorites are, "The Light" (his original), "Over the Hills and Far Away"" (A Gary Moore cover, who is his idol and all of his GM covers are awesome!), and "Emerald" (Thin Lizzy). Plays many different instruments. First known as a guitarist. You got a taste of tone and style in this song. He's indeed of a metal persuasion! Leaning on the melodic version, not death and deep growls. In many covers you will see his sense of humor. Since he stepped down from Sabaton he's had the time and energy to put more into his cover videos. Lately he purchad a banjo and has put it to good use. I recommend you check his yt channel. Many different styles being metallized!
