The main difference is that sugar paste will never truly harden and gumpaste will. This makes gumpaste more suitable for making models or flowers in sugar. Because it hardens so much it is also not generally suitable for eating once dry. I hope that brief description helped and that you continue to enjoy our videos.
Hi Tina, technically it could be possible but we highly recommend using air drying clay. There are lots of individual elements to assemble each flower, some using tape and/or wires. They would all need to be fired if using polymer so would require a lot of forward planning before you even get to the assembly stage.
