Personally I think the Rainbowdash Applejack thing is just open for interpretation, not really any solid evidence or romantic gestures to confirm without a shadow of a doubt that they are a thing like Lyra and Bon bon are. Alot of things are still pretty vague about their future lives. Pretty much the only 100% canon confirmed couples within the main six are Pinkie Pie and Cheese Sandwhich, that's it. Never would have thought that Pinkie of all ponies would be the one to definitively lose her virginity.
Appledash and fluttercord are confirmed by the writer of the show, Josh Haber, on Twitter. That not straight on, directly, but unless you can't put 2+2 together, it's very obvious

After crying I rewatched the episode immediately and when I noticed that I didn’t see Granny Smith anywhere then I noticed that AJ was wearing her neck scarf and I was destroyed.
This episode is far and away the most difficult one for me to look at. It's hard to believe it all came down so soon, and just shy of its 10th anniversary. And I couldn't even watch it organically because my family couldn't afford cable anymore and are vehemently anti-Netflix, so it felt like watching a childhood friend pass on from a terminal illness over a Skype call. ...Doesn't really help that they, after denying it would be the case, they all but confirmed that Twi would eventually outlive everyone, except maybe Spike. True, ponies have been shown to live for many moons (Granny Smith), but Twi's still going to outlive them eventually. Thanks for the depressing implications of G5, pals.

I think I spaced-out my viewing of the final season over the course of an extra 6 months just so it wouldn't be over until I felt I was ready for it to be over. I had been a fan since 2012, and it really is so surreal -- this era, this dumb little thing that I loved and looked forward to but...that was so obscure and "weird" I felt like I couldn't share it. I do not know of another fandom like this one. Sure, the cringe is real and not everyone who was a part of it was a saint. But I think an earnest message of friendship and understanding was _deeply_ needed in this world -- we need that magic and always will. If and when I have kids, there is no doubt in my mind that I will share this show with them. It is no exaggeration that this darn TV show -- of all things -- helped me through my high school and college years and has served as a formative component of my worldview and moral compass. I'll never forget it. Horses are cool man. Always will be /)

For me, Last Problem is the best final episode that any show has had. As far as the ships: CheesePie being officially confirmed is the second greatest moment in the series. I'm still not convinced that AppleDash or Fluttercord are necessarily canon. The latter is a bit heavier implied, but I think Dash just helps on the farm after Granny's death.

I’m sad, I joined the fandom this year, but the show ended, so I missed out on so much. The whole “Golden age” has passed. The fandom is still going, but there will be nothing more from the show it’s self.
