With your Villagers, it looked like they were trying to path somewhere else, hence all the jumping, when you sealed yourself inside it meant they had no where to path so took the job instantly
Villagers are a pain, but the issue is that they will sometimes try and link to something that is in the area. It could be a barrel or anything in a different building. When you blocked off behind you, the Villager could only path find to the job block in front of it
You... you had oak the whole time because of the moss. Azalea trees give you oak wood. You had one in your first chunk. You wouldn't have got oak saplings or leaves but you could've had the wood. 😅 I would love another 100 days of this though. Would be fun to see you get to the Nether.

Yeah, so we love you Jerry. Also honestly this was awesome. It was a fantastic and fun video that was super enjoyable to watch. The single chunk to huge set up is really fun and enjoyable to watch. So kudos on this video.
Can be a bit frustrating but I found expanding the chunks pretty rewarding! Definitely more efficient ways to play though it than I did but I'm not exactly known for being smart 😅
I thought this hundred days was really impressive I loved how you set up everything I'm a big fan of your farming setup for a upcoming series I think it would be fun to see you do a farm focused 100 days
Isolating the villager from other things of interest (other villagers, other work stations, etc.) is the best method I have for getting the villager to trade, I also noticed that time of day was a factor. Enjoyed the vid. PS: Did you know you can smelt logs into Charcoal? That is equal to a single Coal (smelts 8 items).

He makes charcoal at 1:25 for torches, then proceeds to never do it again.
