I'm from rural Louisiana where farming is still king. I can come off as a city boy, but spent a lot of my youth helping family and friends out on their farms. While I can never be a farmer myself since Hay is my Kyrptonite I will always have a deep respect for those who do it. Your videos are so lovely and serene and you make it look so easy.

I am from Ukraine. We never call zucchini caviar "Ukrainian". This dish is popular in Russia, Bulgaria, Serbia and etc. The homeland of this dish is Russia! Tomato paste is always added to the zucchini caviar and no water. Everything is stewed in its own juice. Then it is pressed until it becomes a thick puree. What you have prepared is called a "vegetable salad", it is also delicious. Good luck! like your channel!

Add tomato paste, salt, spices to taste, simmer for a few more minutes, if there is a lot of liquid, you can increase the heat, open the lid and simmer for a few more minutes until the excess liquid evaporates. We also prepare very tasty eggplant caviar, but according to a different recipe.

There is so much color and beauty in your video! I have never heard of Ikra and it looked good.

Yes, the squash bugs have been devastating this year!! More loss than produce in most plants they've invaded, but oh well. Like you said, there's abundance in the other crops.
It looks good. Zucchini is cheap, but it tastes like green Styrofoam to me. I also think I was force-fed the stuff too much as a child since my father grew heaps of it. I like to use it in zucchini bread and caponata, but this ikra bruschette (plural of bruschetta) gives me another option. Thank you.

Question for you: I tried the recipe in your cottage core baking book for springerle cookies, the dough stayed crumbly, would not mix....I noticed your blog recipe says 1/4 CUP HEAVY CREAM, whereas your Baking Book says 2 TABLESPOONS HEAVY CREAM, it seems the 1/4 cup is correct,? it might have made my dough much better...I had to throw away the whole batch, they were as hard as a rock..... also one recipe says baking powder and the other doesn't???
