Nonna Pia knows what's up. I never use "Italian Style " breadcrumbs either, always season the plain. And I always fry them in Mazola oil too. My mother taught me that way. I would eat ANYTHING that Nonna Pia cooks! ❤😊

I love this lady! We were the Jewish neighbors down the street. My mother made veal cutlets the exact (almost) same way. (Remember when veal was affordable?) Mom would never dream of adding Parmigiano cheese to bread crumbs, and the frying would be done in solid crisco shortening. There was something forbidden about using liquid vegetable oils, anything solid and totally hydrogenated had to be better. Sadly, I never had Italian friends growing up. All those amazing dishes born in poverty and matured in America of the '40s and '50s would have to be learned on our own. And a number of years of living in Italy didn't hurt. Anyone who laughs or sneers at her accent, she speaks English a hell of a lot better than I spoke Italian in my early years. Auguri, e grazie mille cara Signora!
