- Ants climbing a tree (simplified Chinese: 蚂蚁上树; traditional Chinese: 螞蟻上樹; pinyin: Mǎyǐshàngshù) is a classic Sichuan dish in Chinese cuisine.[ The name of the dish in Chinese, Mayishangshu, has been translated as "ants climbing a tree", "ants on the tree", "ants creeping up a tree", "ants climbing a hill" or "ants climbing a log". It is so called because the dish has bits of ground meat clinging to noodles, evoking an image of ants walking on twigs. The dish consists of ground meat, such as pork, cooked in a sauce and poured over bean thread noodles. Other ingredients in the dish may include rice vinegar, soy sauce, vegetable oil, sesame oil, scallions, garlic, ginger, and chili paste.
螞蟻上樹是一道中国川菜 ,也就是肉末炒粉丝,用辣豆瓣醬调味。
菜名源于肉末沾在粉絲上,看上去如螞蟻在樹枝上爬[2][3]。材料包括肉末(多半是牛肉),由醬汁烹煮,放在粉丝上,其他的材料可能有米醋、醬油[2]、芝麻油[2]、青蔥、蒜、薑及辣椒醬。
1) Cut Cellophane noodles into two sections, drain water,
Dice Spiced Dried Beancurd, Shiitake mushrooms, Coriander;
dice Chili Peppers and Ginger.
2) Put oil in a hot pan, add Shiitake mushrooms, stir-fry,
add diced Ginger rice, Spice Dried Beancurd, stir-fry with
Chili Pepper; add Spicy Bean Paste (2 tbsp), Soya Sauce (1 tbsp),
Dark Soya Sauce (1 tsp), add boiling water (1 bowl, ~220g),
Add sugar (1 tsp), pepper (1 tsp), try the taste, add salt if needed.
Cook Cellophane Noodles for 2 min, add Sesame oil, Coriander.
Mix well and serve.
素螞蟻上樹
材料:粉絲 3 扎(150 克),五香豆腐乾 2 塊(200 克),香菇 4 朵,芫
荽、小米椒、辣豆瓣醬、生抽、老抽、糖、生薑、胡椒粉、
麻油各適量.
做法:1),剪成两段濾水待用;五香豆
腐乾切小粒;香菇泡軟切小粒;芫荽切碎;小米椒切碎;生薑切
小粒.
2)熱鍋下油,下香菇炒片刻,下薑米炒片刻;下五香豆腐乾,小米
椒炒片刻;下辣豆瓣醬 2 湯匙,生抽 1 湯匙,老抽 1 茶匙, 炒片刻,
下開水 1 碗(約 220 克),下糖 1 荼匙,胡椒粉 1 茶匙,試試味道,
不足便加小許鹽,下粉絲煮 2 分鐘用筷炒匀,把水收乾,加入麻
油,灑人芫荽,加入麻油拌匀裝盤
