      ના, લીંબુ સરસ પાકા પાતળી છાલનાં લેશો અને સરખા બાફશો તો કડક નહીં થાય. હું ટ્રેડિશનલ રીતે પણ લીંબુને આથીને અથાણું બનાવવાની રીત થોડા દિવસમાં ચેનલ પર મૂકીશ, બંને રીતે સરસ બને છે. આભાર

      ના લીલા લીંબુ ન લેવાય, શિયાળામાં મળતા પાતળી છાલ નાં પીળા પાકા રસદાર લીંબુ જ અથાણાં માટે લેવા, ઇન્સ્ટન્ટ નાં બદલે લીંબુ આથી ને તેલ ઉમેર્યા વિના મસાલા અને ખાંડ/ગોળ ઉમેરીને કરો તો પણ મસ્ત અથાણું બને છે.

      લીંબુનું મીઠું અથાણું (ટ્રેડિશનલ રીતે)
      સામગ્રી :
      ૧ કિલો ડાઘ વગરની છાલનાં લીંબુ
      ૩ ટેબલ સ્પૂન મીઠું
      ૧ ટેબલ સ્પૂન હળદર
      ૧ કિલો દેશી ગોળ
      ૧ ચમચી વાટેલુ જીરુ
      ૧ ચમચી અથાણાં નો મસાલો
      મરચું પાવડર સ્વાદ પ્રમાણે
      રીત :
      ૧ લીંબુને ધોઈ ને કોરા કરી લો .
      ૨ એકેક લીંબુના ચાર ટુકડા કરી કાપી લો .
      ૩ શક્ય હોય એટલા બધા બીયા કાઢી લો .
      ૪ એક મોટા પ્લાસ્ટિકના ડબ્બામાં લીંબુ મીઠું અને હળદર મિક્સ કરીને રહેવા દો .
      ૫ એક મહિના સુધી રોજ ઉછાળી ને ઉપરનીચે કરો . હાથ નાખવો નહીં
      ૬ એક મહિના પછી લીંબુની છાલ સહેલાઈથી તૂટી જશે
      ૭ એક ચાળણીમાં લીંબુ કાઢીને હળદર તથા મીઠાવાળો રસો નિતારી લેવો .
      ૮ ગોળને ઝીણો સમારી લીંબુમાં મિક્સ કરો અને બાકીની સામગ્રી ઉમેરી દો .
      ફરી મીઠું નાખવાની જરૂર નહીં પડે .
      ૯ ગોળ ઓગળે એટલે કાચની કોરી, તડકે તપાવેલી બરણીમાં ભરીલો .
      ૧૦ આખું વરસ સારું રહે એટલા માટે અથાણું કાઢતી વખતે ચમચો કોરો અને ચોખ્ખો વાપરો અને બરણીનું મોઢું કપડાથી બાંધી દો .

      મારું સજેશન એ છે કે પાતળી છાલનાં લીંબુને સમારી બી કાઢી, કાચની બરણીમાં હળદર મીઠું ઉમેરી ભેળવીને એક મહિના સુધી આથવા, લીંબુ એકદમ સોફ્ટ થઈ જાય પછી તેમાં એક કિલો લીંબુ હોય તો એક કિલો સમારેલો ગોળ, અથાણાંનો મસાલો ઉમેરી ગોળ ઓગળે પછી બરણીમાં ભરી લેવું. (આ રીતે બનાવો અથાણાં માં તેલ ઉમેરવાની જરૂર નથી) એકદમ બેસ્ટ અથાણું બને છે.
