Okay, so i love Arnie, but i also watch meat church. So i combined the two, with some personal tweaks. Cholula as a binder wow, and brisket for the season. Follow arnies instructions otherwise. Used a griddle to sear each chunk at the end then chopped for tacos. If i could add a photo....

Made these yesterday. I didn’t have the rubs suggested, so I created my own. Took 5 1/5 hrs on kamado Joe. Came out awesome.

You absolutely could, but you wouldn’t get any smoke that way. If you don’t mind using liquid smoke, you might be able to use that.
Putting in the oven after wrapping is fine, since they won't get any smoke at that point.
