      Sorry it's -25 here with -40 to -50 degrees below zero wind chills here in Minnesota now so my mind tends to wander :-)@@Thespicyapron

    Just a couple of points :-D Firstly, these were (I think) medium rare, whereas your fella liked medium. So what is he going to east? Secondly that was a good a representation of Sous Vide water displacement bag filling thingy that I have ever seen.
    Third of Two What the lady says below is interesting and important. There is a sliding scale Temp/Time of Pasteurisation that should be observed.

    Hi Heather. Cooked your recipe last night and finished on the BBQ grill. Fantastic. I think your point about using the ziplock bag rather than vacuum packing is very important. Whilst our burgers were juicy, they were also a bit flatter than I wanted due to the vac packing I did, even though I froze them before vac packing. Whilst all the flavour and juiciness were there they were just a bit too compress. Hey ho, you live and learn. Thanks again for the great tips.

      I use vacuum pack by partially freezing the burgers before packing

      Thanks Jon!! Yes, I've had a few things come out "flat" when using the vacuum seal. Although, I have learned that if I do it on "gentle mode" that helps! I'm glad you liked the burgers! I'll never do them any other way now!!

      @@Thespicyapron We catered for 12 for a birthday party last month and made the burgers ahead. It was so easy just to get the cooked burgers out of the fridge and throw them on the BBQ. I'd used ziplock bags and the immersion method for getting all the air out before sous vide'ing them. Worked much better. Much plumper. They were a universal success with our guests.

    I think your husband is very lucky man!! Could you cook from frozen? How long for 6oz med rare do you think? cheers

      That's very sweet. Thank you. You can do it from frozen but I've never done it so I don't know the time. The temp would be the same. If I were to try it I'd add an hour to the cooking time. Lete know how that goes!!

      Thanks for reply. I'm gonna try using my metal crumpet rings and vacuum bag the unfrozen burgers/beef in the rings so they stay in shape. cheers@@Thespicyapron

    Great video. I will try it tomorrow but for that thickness of burger at that temperature, I'll go a lot longer than half an hour.

    Very Nice! Do you need to add eggs into the patties ? And other types of condiments ? Or pure beef only

      Thanks for the compliment! :) I do not find that it's necessary to add the egg. I know a lot of people do that, but I didn't and these burgers were amazing and very juicy. They also held their shape. So, unless you really want that egg, I don't think you need it. If you click the link to the full recipe (it's in the description box), you'll see what other spices I added. But you'll be just fine with salt and pepper and the beef!
