If the sugar syrup is too hot, the fried gulab jamuns may shrink when added to it. The syrup should be warm to touch when the jamuns are added. And also undercooked jamuns may shrink after taking out

Dip hot gulab jamuns in warm sugar syrup right after frying to help them absorb it properly.
