    Eto yung pinakatotoong "Authentic" Pinakbet Ilocano sa buong youtube. Yung iba makapagpost ng "Pinakbet Ilocano" pero ginigisa naman. Pero nanay ko, hindi karne nilalagay kundi hinimay na isda. Minsan galunggong, minsan tilapia. Yung mga matatanda ang masarap magluto niyan kahit walang magic sarap. Kapatid ng asawa ko na antagal sa ibang bansa, nung umuwi ang sabi sa lola, "La, adiay man kuma man luto yo nga pinakbet" 😂 Kakaiba talaga ang lasa ng luto ng matatanda. Pareho naman ng ingredients pero bakit sa kanila mas masarap haha.

    Data ti agpayso nga pinakbet, other vegetable ingredients depends on availability or when these are season, like bunga ng malunggay, bunga ng singkamas, patani seed, parda, or sigarilyas (wingbean), but never ang kalabasa, it alters the taste. Ang baboy mas gusto kong isahog ang may taba lalo na yung liempo. Nagimas lakay makapabisin, match na data ti kilabban. Nice post.

    Ilocano pinakbet brings back the glorious days of my childhood. We have 2 trees of alokon in our backyard and since became a steady source of ingredients for my lolas and mommy's pakbet. All other vegetables are just around the corner.
    Nobody will go hungry kung makapagtatanim lang tayo ng mga vegetables and fruit trees saating bakuran na available naman sa karamihan ng mga kabahayan sa probinsya.

    my grandmother is ilocano and this is how she cooked pinakbet. we have a huge "alokon" tree (we call it "Baeg" in pangasinan) in our yard that yields a lot of flowers, i would gather like half a sack each week and sell them in the market. there are 2 flavors missing here. one is the smoky flavor as pinakbet which is traditionally cooked using firewood. the other is the subtle sweetness of the fresh vegetables. in the province, all these vegetables are planted in our backyard so we pick them fresh just before cooking. i learned to cook this dish at a very young age (around 10). when she wants me to cook this she would say "ag-pa-kib-bet" ka man" which means to cook vegetables until they shrink and wrinkled especially the native round green talong. i think "pa-kib-bet" is the etimology of the word "pakbet".

      that's correct, the name pinakbet was from the word pakibbet which is really Ilokano - the original. now some people made their own recipe and called it pinakbet when they don't even know what it means :). Ilokano laeng ti maka ammo ti pinakbet

    Pinakbet is the short cut of the Ilokano word “pinakebbet” meaning wrinkled. The old Ilocanos used small eggplants and ampalaya which they cut in half but not separated. Okra, string beans, patani, Bagoong and luya are a must. The wrinkling of the vegetables is achieved by slightly opening the lid while slow cooking. Shake, never stir. Just sharing how my old grandmother prepared the dish.

    I was born and raised in Laoag, Ilocos Norte and Ilocano Pinakbet and Inabraw/Dinengdeng are my favorite vegetable dishes.
    Kudos, Sir, your Pinakbet is truly authentic. I suggest though that lots of garlic added at the bottom with the ginger and shallots will even enhance the flavor of the Pinakbet.

    Finally, may nakita ako na tulad ng luto ng nanay ko HAHAHA since magkalayo kami ng nanay ko at di ako nakakauwi sa bahay since lockdown, nakakamiss ang pakbet.     I love your TH-cam channel. I miss filipino foods and I don’t know how to cook alot of ilocano dishes. I love pinakbet but its so hard to buy ingredients (authentic vegetables) here in the US. Plus, Im so far from Los Angeles so I don’t really have alot of filipino food option. Uhh I love this

    Pinakbet Ilocano. Sa pagkakaalam ko yan ang original na pinakbet. Tapos madami nang gumawa ng mga iba't-ibang version at nagkaroon na ng may ginigisa. Pero ito ang favorite ko sa lahat ng ulam. Not Ilocano here but my blood. Proud Ilocano blood ako 😊😊😊😊 I miss my Lola.

    Sarap Manong, gustong gusto ko to kaya lng di marunong mgluto. Maraming salamat Manong makaluto na ako ng gaya sa luto ni inang. Bravo... Yehey!!! My kids love this too.

    Gustong gusto ko talaga ang pakbet ng Papang ko mula ilocos Norte, yan ang original na lasa meron pa malalaking buto ngvpatani parang patani at parang singkamas na malutong, wala na cubes yan prito isda lang pwede na. Hayyyy naku sabaw lang sakin ulam na ulam na.. at namiss ko pa un longganisang ilocos nila un maasim asim na walang colouring sarapp. Sana in ang makita minsan paano timplahin 👍👍👍 .

    Great cooking skills and good humor Architect. Di po ako mahilig kumain ng gulay pero natakam ako sa luto mo po. For the 1st time, I tried magluto ng pinakbet following your instruction. Super sarap lumabas kahit walang bulate vegetable sa Dubai. Maraming salamat ulit architect mula sa isang hamak na inhenyero from Dubai. God bless po.
