Good ideas. We make something similar: a breakfast casserole (eggs, milk, shredded cheese, green peppers plus diced spam) in a dutch oven. All our cooking is done outside and dutch ovens are our oven. Indeed our RV is designed around outside cooking. We will try the french toast in a dutch oven. Sounds really good. Happy Trails

This recipe looks so yummy! I will have to look into that Instant Pot! Every time I serve a meal at home and see all the dishes we used I am dismayed that I will never learn how to cook in a camper van with only a few pots and dishes! The leftover aspect is extremely appealing!

I was cutting on a cutting board that “matches” the counter. I picked it up at Walmart and the guy that installed our alarm and stereo cut it to fit the sink opening. The original was too heavy. 😁

I use the small 3qt instant pot in the RV. I have two types that have worked well. One is the Ecovana 3qt mini stackable: www.amazon.com/gp/product/B07771LJKZ/ref=oh_aui_detailpage_o07_s00?ie=UTF8&psc=1 The other is here: www.amazon.com/gp/product/B01L442ZBM/ref=oh_aui_detailpage_o01_s00?ie=UTF8&psc=1 I have found that when I use the stackable one, I have to add more time to the cooking, especially at higher elevations.
I made it this morning for my brother and he loved it. I mostly use blueberries as my fruit. And the double insert pans (mentioned above) work well. Just don't overfill them or it takes longer to cook. We are at altitude here so I cook for 30+ minutes.

+Polly78249 If you make this at elevation you will probably want to add 5 to 10 minutes to cook time if you use the double insert.
For the lactose intolerant coconut cream works well in our household. The 3quart-er is perfect for an RV countertop.
