    Last year (2022) I did this with an $8/lb. pasture-raised local farm turkey and it was amazing. I did a few things differently. is that I put the bread on a rack, then put carrot, celery, onion (chunks of all), a few whole peeled garlic cloves, and some white wine in the bottom of the pan. (I adapted this from Adam Ragusea.) When I did the gravy, I used an immersion blender and kept the vegetables right in the gravy, which thickened it without flour. I made a compound butter with some herbs and put that UNDER the breast skin. But other than that, it was all like this and it was the best turkey I ever made. I'm doing it again this year (2023).
    Oh, and by the way, if you put that bread under the broiler for a bit, you'll get the most delicious toasty bread you've ever had. Slice it up and serve it in a napkin-lined basket.

    Amazing recipe. I’ve tried so many over the years but this one....did it last year and it gave me the juiciest Turkey, everyone raves about it. Combine it with the Turkey stock recipe and you have a perfect thanksgiving (and Xmas!) dinner.
    Oh and yes- the bread most definitely was the best part. I cut it up into pieces and served it as an appetizer, everyone raved. I was totally the star.

    I also cook my turkey breast side down and this year I'm going to do it on the bread. That's a great idea! I usually use a rack and it leaves an ugly rack mark on it. It's the best turkey on the planet cooking it upside down part of the way! Can't wait!!

    I did the "dry brine" method but I thought I made it up!😂 I was so sick and tired of the hassle of "wet brining, that I said let me try something else....I didn't want put any herbs on it because I didn't want them to dry out in the fridge and burn in the oven, plus I knew I had to rub it with butter afterwards so I said I'll just use nothing but kosher salt.... Let me tell you people, plain kosher salt, with nothing else made the BEST FLAVOR I ever had in a turkey! Everyone was asking me what I seasoned it with and when I told them just kosher salt, their jaw's dropped! 😂 Nothing like it folks! It enhances the natural flavors like nothing else! DELICIOUS 😋

    Great Idea. I ABSOLUTELY Love This Man's Cooking Techniques. I Have The Back Taken Out And Then Put The Turkey Back Together, But I Love That He Cut It Up And Seared. When I Do Parts Throughout The Year, I Always Sear. Don't Cook Like I Use Too, But Love Great Cooking Videos Like This. When I Did Cook, I Would, Cook 4 or 5 More Legs. I Wash All Meats In Apple Cider Vinegar. You'd Be Surprised How Much Debris Come Off Meat. Depending On The Size Of The Meat, I Soak It About 3 to 5 Minutes. It's Helps To Softens The Meat A Little Also. It Also Reduces The Foam In The Pot.

    Any time I wet brine I just toss it all in a cooler and leave it outside over night ;) 49th parallel is plenty cold outside during Turkey season. Also these videos are awesome bro, glad I finally found this channel for some inspiration!

      Ahh sooo so happy to hear it. I have heard a lot of success stories and a lot of head scratching stories that I’m still trying to wrap my head around, like someone following this method with a 20 lb turkey and it overcooking after 3 hours which in my opinion is impossible. But I’m so happy it worked well for you!! Now we get ready for a month of Christmas recipes!

      @@NOTANOTHERCOOKINGSHOW I think the biggest help was the internal probe thermometer, I had a 13lb bird and was done in around hour and half to two hours. If I didn't have those I would have assumed it would have taken longer and over cooked it. Took it out and re-checked with a digital meat thermometer to and it was right on the money at 155 and rising.

      Minus the bread!!!!!! I add garlic,onion,celery,carrot to the bottom of a dry roasting pan! Add water or white wine!

    I'm not cooking this year because I have family that are going to be hosting Thanksgiving, but I enjoyed the video. The last time I cooked a turkey, I fried it. The next time I cook a turkey, it will be using this method. Thanks, and I'm looking forward to that sandwich!!

    Dude, your videos and food is really good. Your channel is the first one who i followed through on food making. Well the stuff i can make at home at least not this magnificent turkey. :O. I made the grilled cheese first and it was the first video i saw. After that i made your pasta algio e olio and then the pesto

    This looks fantastic and my mouth is watering. I plan on using your method this week, but i have two guests coming who are VERY sensitive to gluten. What do you recommend if i was not able to use the bread? Thank you!

      @@ogadlogadl490 It worked out! I didn’t use the buttered bread on the bottom, I used a regular rack. My only issue was figuring out what the internal temperature was. My thermometer was saying it was at temp very early in the cooking, but there was no way it was done in less than 2 hours. So I kept reinserting the probe and I was nervous it wasn’t cooked right (either under done or too hot and dry). But it worked out in the end.
