    Ladyfinger biryani, or bhindi biryani, is a flavorful and unique dish that combines the richness of biryani with the distinct taste of ladyfingers. Here’s a simple recipe for you:
    Ingredients
    For the Rice:
    1.5 cups basmati rice
    3 cups water
    2-3 green cardamom pods
    1-2 cloves
    1 bay leaf
    Salt, to taste
    For the Ladyfingers:
    250g ladyfingers (bhindi), chopped
    2-3 tablespoons oil
    1 onion, thinly sliced
    1 tomato, chopped
    1-2 green chilies, slit
    1 teaspoon ginger-garlic paste
    1/2 teaspoon turmeric powder
    1 teaspoon red chili powder
    1 teaspoon biryani masala (or garam masala)
    Salt, to taste
    Fresh coriander and mint leaves, chopped
    Instructions
    1. Prepare the Rice:
    Rinse the basmati rice under cold water until the water runs clear. Soak for 30 minutes.
    In a pot, bring water to a boil. Add the soaked rice, cardamom, cloves, bay leaf, and salt. Cook until the rice is 70% done, then drain and set aside.
    2. Cook the Ladyfingers:
    Heat oil in a pan and sauté the sliced onions until golden brown.
    Add the ginger-garlic paste and green chilies. Sauté for a minute.
    Add the chopped tomatoes, turmeric, red chili powder, and salt. Cook until tomatoes soften.
    Add the chopped ladyfingers and cook until tender. Stir in the biryani masala and mix well. Cook for another 2-3 minutes.
    3. Layer the Biryani:
    In a heavy-bottomed pot, layer half of the partially cooked rice. Spread the ladyfinger mixture over it.
    Top with the remaining rice. Sprinkle chopped coriander and mint leaves.
    4. Final Cooking:
    Cover the pot with a tight lid and cook on low heat for about 15-20 minutes to allow the flavors to meld.
    5. Serve:
    Gently fluff the biryani and serve hot with raita or salad.
