Looks really fascinating and fun! We actually just got a Lidl here in Wilmington, NC, USA, but we also have a great fish market right on the water here. Going to try and get some sea bass from them.
Questions: 1) ever use any other seasonings on either fish or potatoes in addition to the salt? 2) how long are you pan-frying the potatoes after boiling? 3) any particular vodka better than another?

1) nothing other than salt, but I've seen people covering some potatoes in the salt too, but I'm not confident recomending that 😅
2) about 5-7 minutes
3) not really, it doesn't affect the flavour, its really just for the salt crust to stick better together, so any cheap vodka will do really
