Grass being immune to Fairy makes so much sense and would actually help the type chart more than anything else. I think so at least. Nerf one of the strongest offensive types and buff one of the weakest defensive types. With a great theme reasoning to boot!

I don't know about 'more than anything else'. Grass is a more than decent typing in competitive Pokémon. Wanna nerf Fairy in a fair way and thus fix the type chart? Here's what you do:
      - Reverse the type interaction between Bug and Fairy, so that Bug resist Fairy instead of the other way around.
      - Also make Fairy weak to Bug, using the same logic for why Poison beats Fairy.
      - As a trade-off, make Fire lose its resistance to Fairy. That always seemed like an unnecessary boon for the Fire type in my eyes. It's already a really good offensive type, it doesn't need to be a great defensive type as well. The justification is a little flimsy anyway, because fairies wouldn't need to get close to fire when they can use magic. Plus, it would give Incineroar an additional weakness, which I think we can all appreciate.
      - Make Ice resist Water. This interaction goes both ways; yes, if you throw a cube of ice into a lake, the lake won't care. But if you throw a glass of water onto a glacier, the water will just freeze. Water-type Pokémon wouldn't really care about this interaction, because Water is good enough as is, but Ice would really appreciate the extra resistance. Also yes of course, Scald would bypass this interaction much like Freeze-Dry does.
Those four changes alone would do a world of good for the type chart. If you want to do more, here is one more optional change one might consider:
      - Give Psychic something. Its days of supremacy are well in the past, and honestly it's now one of the weakest types. I can see two justifiable buffs: either a) make it resist Fairy (though that may be a bit too much of a nerf for Fairy, all things considered) or b) change Dark's immunity into a mere resistance. Dark, like Fire, is one of those sneakily good types that have come to dominate the meta, for reasons far exceeding its defensive immunity to the rarely-seen Psychic. One might even suggest its immunity to Prankster is significantly more impactful. Dark would absolutely survive losing its trademark Psychic immunity, which I repeat seems like overkill in the modern era of Pokémon. Now, admittedly, this would be a pretty unremarkable buff for Psychic, so I would at least suggest also making Psychic-types immune to confusion. They are too sound of mind to get confused - there's your justification.
Again, Grass may seem bad on paper, but in practice it isn't. Its immunity to spore and powder moves is huge in competitive Pokémon, and its resistances and offensive strengths are all very useful. This is what sets it apart from Bug, which has the same amount of offensive weaknesses, but has fewer and less useful defensive resistances, offers far less utility and its limited offensive strengths don't really help it; Psychic-types are not common, Dark is already weak to the best type in the game, and Grass has 4 other weaknesses to better types. Grass has a raison d'être in the meta, while Bug does not.

One thing you didn't seem to be considering (or, at least, you didn't mention it) was the possibility of some types being immune to themselves. I think this one is usually very easy to justify in terms of flavour, and could be a great choice for types that don't need a buff because being immune to yourself is both a nerf and a buff at the same time, whereas just gaining an immunity is a straight buff.

7:44 Honestly Grass AND Bug should resist Fairy. Fairy's whole idea was to bring balance so it'd be a great idea to make some of the weaker types resist or even be immune to Fairy. No need to be SE really.
I think it'd be a great idea to reexplore this concept with broader concepts, like how Grass type is immune to spores and powders and Fire-Ice-Electric-Poison are immune to their own status condition, rather than a specific type.

It would make sense too since fairies in folktales are usually very in-tune with nature, meaning that as a result they might be less likely to hurt nature-based types such as grass and bug. Not to mention the fact that pixies are a type of fairy often depicted and they are usually the size of bugs, meaning a bug could possibly take one on. Bug beating Fairy would be quite awesome.

Flying types are immune to grounded entry hazards and terrains.
Dark types are immune to status moves from a Pokémon with Prankster.
Steel, Rock, and Ground types are immune to Sandstorm damage.
I feel like Psychic could have an immunity to being confused, because with that much intelligence and such, confusion would probably not be an issue.
One of the types could be immune to sleep, whether for the idea of not needing sleep or something.

For bugs immunity, I think psychic is a good fit. Rock being immune to Fire is an interesting idea, but realistically, it doesn't fit as well as one would think. After a cursory search, I realized that steel melts from fire at 1370°C or so or 2500°F. Meanwhile rocks melt between 600°C to 1300°C, much less than that. Yes, technically metals lose their durability around high heat, way before it melts, but it's still interesting to think about.

Or icicles hitting on an iceberg. I think it makes complete sense.
Then again, immune to itself seems pretty reasonable for a lot of types, not just ice. Fire and Water both spring to mind, pun not intended. "Oh no, it's MORE of the stuff I'm made of, what-ever shall I do!?"

The conductive properties of water make electric SE because almost all of the water Pokémon are creatures living in water rather than creatures composed partly of water. Now grass, on the other hand, I don't see it doing ANYTHING to the fire. That burns off way (and I mean WAY) faster than ice melts, so it probably wouldn't even reach the fire itself before burning out. Also, it wouldn't leave a puddle of water, threatening the fire.

@@DrTimes99 While it's nice you want an interesting triad or so, making Water types immune to Fire type moves is really bad for balance, not just in competitive where Water types are prized defensive players but also for the playthroughs as well since it's easy to understand why the Grass, Water, Fire trio works. Making one of the first type interactions for kids complicated from the getgo isn't exactly what I'd call good.
