What is your take on players wanting to start their character at level zero to add to their backstory and fully embrace their character?

I'm all for it if that's what all the players want to do. I think it allows a player to not pick a class and then do so based on how they chose to play. This is especially good for someone who hasn't played and is not familiar with the classes and how they work.
