The "Turbocharger" looking thing on the left side of the cockpit is probably the Cold Air Unit which cools and dries the air for cabin conditioning and possibly avionics too. As for stressed panels, typically the aircraft would need to be in what's called "Rigging position" usually on jacks and with a specific fuel load and distribution so the airframe is in a known position and stress for the panels to be removed. Sometimes, jury struts have to be installed to hold things in place so it doesn't bend or twist and everything can go back together properly and easily. I worked on the Tombs briefly many years ago.
Fire extinguishers used on the engines would normally be CO2 or BCF (Halon). Foam would be used for a fuel fire typically if there was a fuel leak or the whole aircraft was on fire.
The Turkish Air Force is getting rid of all their Phantoms, they just last week did their Final farewell flights, all flying, and lots of Spares too, maybe a good chance to get one or two, and even a Flying one would give the group, something to shout about.
