Are the Dalstrong products going to be comparable to the same knife, from say Wusthof/Global/Shun/Messermeister? Looking for a good large chef's knife and a couple Santoku style knives for everyday use.
Love Picanha...I think my family even likes it more then ribeyes now. I cook it similarly on my kettle, but as a whole piece (dry brine w/salt, then pepper & garlic powder), cook to preferred temp and reverse sear, baste with garlic thyme butter. I usually get smaller ones though at 2.25lbs from Butcher Box (grass-fed), so it works well.
My butcher sells whole usda prime top sirloins for 5.99 a pound but will not separate the cap. They leave it on and cut massive steaks which is annoying. They just recently started selling just the cap so I’ll be trying this

I have been digging the porterhouse especially off a good cow…. I like the gaminess of the prime rib slow cooked rather than the ribeye steak. I also only buy a whole grass fed Black Angus I never buy prime grade beef. My opinion is very biased.
That crust you got on that Picanha is the reason why nobody should be buying rubs with charcoal in it. You can get that gorgeous crust on hot/fast cooks without it.

Do grilled brisket tacos won't disappoint 1.) Slice raw brisket thin 2.) Season with season all or lawry's 3.) Grill on high heat(watch out for flare ups because of high fat content) 4.) Chop brisket with clever( try to get a fine chop because brisket is tough) 5.) Serve over grilled corn tortillas (onion, cilantro, lime, and salsa opcional) Creamy green salsa recipe 1.) Grill 5 jalapenos 2 serrano peppers 2 cloves of garlic and a 1/4 white onion (make sure you get a nice char on the peppers and onions) 2.) Blend everything together and slowly very slowly start adding canola oil while blending( this will emulsify oil and get a creamy consistency. Tip if it seperates you went to fast. Let oil sit on top and remove excess.) 3.) Season with salt to taste.( even thought you have a lot of peppers this salsa is not hot)

Suggest u sear the whole piece first one minute or so each side. Then cut the steaks sear them and cook them.

There's only 5-6 lbs of picanha per animal, so when it becomes more popular expect prices to soar.

They stock these at our local meat market in Granbury, Texas. I smoke them with a salt and pepper rub and smoke at 225 for 4 to 5 hours.
