This duel between Meta Knight and Kirby is more like Meta Knight training Kirby in wielding a sword. He knows that Kirby is powerful, but he is young, inexperienced while Meta Knight is older and has more experience. As I said before, Meta Knight is training Kirby to be a better swordsman which will help him when he eventually becomes Sword Kirby.
They sorta made it a bit stereotypical with his accent, adding a tune of Mariachi into his entrance every time he speaks, and plus, the actor who plays his dub voice (Eric Stuart) has NO experience with Spanish culture!

Everytime Meta Knight is about to fight Kirby (at least in the games), if he discovers that Kirby is unarmed, he will throw him a sword so that they can both fight on equal footing. This showcases Meta Knight's honor. But here? He's already knocking Kirby away whilst he's unarmed, and gets *someone else* to give Kirby a blade after roughing him up a bit. Meta Knight's character isn't like this at all.
I think he suspected Dedede was watching him, and only acted like that until he left. Once Dedede left, it became less of a duel to the death and more like a training battle
I believe it's to experiment what kirby and king dedede would look like in 2d/3d forms. That's why in this episode Kirby remains mostly 2d while Dedede/Escargoon remains 3D.
