*Ingredients:*
For Aloo Kachori:
- Potatoes
- 2 cups wheat flour (or refined flour)
- Salt to taste
- Oil or ghee
- 1 tbsp mango powder
- 1 tbsp fennel seeds powder
- Red chili powder
- Fresh coriander
For Chutney:
- Coriander leaves
- 2-3 cloves of garlic
- 3 tomatoes
- Green chilies
- Salt to taste
*Procedure:*
1. Boil potatoes in a cooker until 2-3 whistles.
2. Peel and mash the potatoes. Let them cool.
3. Prepare the dough by mixing flour, salt, and oil/ghee. Knead it to a soft consistency.
4. Make a smooth mixture with mashed potatoes, fresh coriander, mango powder, fennel seeds powder, red chili powder, and salt.
5. Prepare a coarse chutney by blending coriander leaves, garlic, tomatoes, and green chilies.
6. Roll small dough balls and stuff them with the potato mixture, sealing them well.
7. Heat oil in a kadhai and fry the kachoris until they puff up and turn golden brown.
8. Serve the Aloo Kachoris hot with the prepared chutney.
