10:05 the monk meant paneer/ cheese but said it with a tibetan accent- paanee which confused you more because you thought he meant paani water 😂 the actual tibetan name for it is chura, its tibetan cheese. tibetans tend to translate and use hindi words for tibetan foods with indians because majority non tibetans arent familiar with the tibetan food names or tibetan food in general. like how one of the monks asked sattu? when you asked for tsampa to confirm lol and how the lady at the restaurant called bhaley roti at first because they just assume you arent familiar with the tibetan names, which is usually the case. tibetans associate tsampa with our identity, this is why you'll find different kinds of businesses like hotels, restaurants, shops, etc named after it. btw the word tsampa actually means barley flour, but is also used for wheat flour sometimes. when you mix it with bhod jha, sugar, butter, chushib(dried ground tibetan cheese) and eat it in a doughy consistency like you did at redeem cafe in dhasa its called paak, and when it has more tea and its more of a soupy consistency its called jhamduk. tsampa is also used in thukpa/ savoury soups and called tsamthuk. paak or any other tsampa dish or tsampa itself sadly isnt available in any tibetan restaurants. i think those are the reasons they pointed you towards the shop to buy tsampa when you asked where you'd find it. tibetans eat tsampa at home. the only tsampa items on a menu i've ever come across was at a tibetan restaurant in nyc, it was tsampa cake, and tsampa cookies lol not authentic tibetan dishes. so yea just thought i'd let you know so you dont have a hard time looking for tsampa dishes again in the future since its near impossible
This is a great comment!! Yes, now I understand what 'pani' means. Also realized what I heard as 'Dhuma' restaurant was actually 'Dolma', correct? I guess your comment has opened by mind to TIbetan accent and probably from now on I will understand the words better 😁 Very informative comment, thank you!
