The funny thing about Yangzhou fried rice is that it doesn't have much to do with Yangzhou. Because of the high priced ingredients, there's no way an average Yangzhou citizen could ever afford to make or even eat the dish. From what I can gather, a Qing era palace chef wanted to make a dish that would impress the emperor. So he invented a fried rice dish, and in honor of the city he was once the magistrate of, he named it Yangzhou fried rice. Also, because emperor's were regarded as god-like figures, culinary ingredients had to be of a certain caliber. So, he selected ingredients that would gove honor to the emperor's elevated status. However, aalthough the ingredients come from Yangzhou, the majority of Yangzhou citizens have never tasted it before. Lol, just a fun fact.
