Yeah, Katara wasn't so against the scams because of morality of stuff like that. It's specifically because they're undercover, and Toph drawing attention could jeopardise the entire invasion.
(12:00) "how to messenger birds work?" you kinda got it right. some birds are able to find their "home" from a great distance. so these birds are trained to go to spot X (say, "the king's palace"), and the different outposts get a regular shipments of birds, so that they could send regular reports back to the palace (if you keep a bird in one place too long, this place becomes it's new home, and it will no longer "work")
I'm pretty sure the way messenger/carrier birds work is by giving them a "home" and then take them from that home to wherever you need to go, and when you want to send a message you "release" it, and it will use the earths' magnetism as a compass to find "home". It's kind of a one way deal, but it's a lot faster than getting something manually delivered especially back before the internet and modern vehicles.
LOVED seeing your joy in this episode. Some people don't appreciate this nuance of this one and tend to just call it filler, but you were smiling the whole way through!

Don't worry everybody except me forget Toph is blind - I guess I just have a super memory - I don't really agree Katara is the leader at all - don't get me wrong she is very important as the voice of reason and the heart of the team but I would say it would be either Aang due to his status as the Avatar or Sokka due to his intelligence or strategic skill that get them out of the worst situations but that's just my opinion
“I’m not sure if I remember how my mother looks like” that breaks my heart every time I hear it - it is the most sad line in the entire show - on a more fun note Katara is a little bit of a hypocrite she is a serial thief herself who stole the waterbending scroll, their Fire Nation clothes, and probably the Painted Lady outfit as well… but her point about having to remain unnoticed does stand a point - Momo and Hawkies rivalry is actually a reference to the unaired pilot where Zuku a pet hawk that was Momo archenemy - and it is kind of weird Combustion man chooses to put Toph in a wooden cage yes he knows she is an Earth bender but he shouldn’t know about metal bending - the only people who does are team Avatar and the 2 bounty hunters Toph trapped in the metal cage - I would love to hear some theories to explain it

If you hit Combustion Man in his third eye he can't focus his shot, causing him to shoot near himself.
