    Been a while since I have had a burrito. Since I made tortillas from scratch this morning, it seemed like a grand idea to have burritos for dinner.

    My name is Scott and in 2015, I bought a Ram ProMaster City to live in. Even though I didn’t know much about RV’s and campervans, I set about building the van out as a minivan camper. And in April of 2016, I moved into my minivan full time.
    Over the years, I’ve learned you don’t need to have a big skill set to build your own campervan. And that living as a minimalist and utilizing solar power can be a less expensive way to live. I’ve also learned that a minivan can be a very comfortable home.

      I cut a lot of footage out to shorten the video down. The cheese was added to the burrito.

    Making burritos are fun. There's so many different ways to prepare them. I personally like using grass fed ground beef, potatoes, corn, chopped tomato, zucchini, chopped garlic, and onion. Season it with salt, pepper, and italian seasoning. Wrap it with your choice of cheese and salsa and you've got yourself a delicious and nutritious burrito my friend lol

      Yeah, isn't that the point of burritos? Take whatever leftovers you have, roll it all in a tortilla, call it good.

    I actually made home-made carnitas in my son's tiny Crock-Pot w/ diced up red green and yellow chili's and made burritos🌯 tacos 🌮 and taquitos and tostadas with beans and cheese and some spanish rice. Of course my favorite is tacos for breakfast, lunch and for dinner 😂 can't ever go wrong ❤

    That’s the best thing when making Mexican food you can combine the same items and make multiple dishes.
    Years ago Jim Gaffigan did a comedy bit about being a waiter in a Mexican restaurant in Indiana and being asked what was in everything. What’s in a tostada- tortilla, meat and cheese, what’s in a nacho- tortilla, meat and cheese. Okay what’s in a burrito- tortilla, meat and cheese. It still makes me laugh thinking about it and it was probably more than 15 years ago.

    You’ve got me hooked on Yellowbird. Mostly the Serrano, but I did get the habanero. My daily breakfast is three homegrown eggs, 2 Jimmy Dean sausage, and some Greek yogurt with berries. Tabasco chipotle on the eggs with Yellowbird Serrano. Hmmm good.

    I started to eat a lot of burritos lately after watching you and it's so easy to make. I use canned chili and add some canned corn. Top it with four cheese and salsa with some fritos chips on the side.

    I got an old griddle a round one so I’ve been cooking my corn tortillas on it and making tacos for lunch today I had cheese and deli turkey. Don’t think that would be a traditional taco but Yum. I have been looking for you cause I ride up the coast every day on my bicycle it’s going to be 80 today so maybe you wanna go to the desert where it’s cooler.

    Yeah... 'had a scandalously long LTR with turkey burger .... delish with organic bread and butter pickles, slices of raw, sweet onion.... often subbing fresh green cabbage leaves for bread..... fav brand of burger is Butterball ... fyi .... when I use bread (one-half bagel), cream cheese is a great spread.... just sayin' 🙋🏻🍀☕

    I think you and I like the same foods. The only difference is you know how to cook them. I just left Trader Joe’s and bought guajillo salsa, green chilies, and fire roasted corn. You should get a commission! :-) I’m thinking that in the past you made chicken green chile Verde and that’s another favorite that I haven’t had in years. Anyway, enjoying the videos, as always, and especially the cooking videos. Jim

    Looks yummy... I wish there was a good gluten free (no wheat) option for home made tortillas

      Found that pan at a TJ Maxx store. The pan is made by Barazzoni.

    To you, what is the difference between a taco and a burrito?

      Burritos are generally a flour tortilla rolled around filling. A taco is a corn tortilla fried crispy and folded in half.
