I honestly love how after his defeat Vergil just exhales and says "interesting". Its a nice way to imply that every time you fight him it can be different. And sense Vergil wouldnt be aware of the Devil Breakers that it would definitely be a new experience for him.
I'm pretty sure Vergil knows about them bc he seems to remember what V remembers. But what neither V nor Vergil expected was Nero going DT, which is in part what leads to Vergil saying "interesting", trying to brush off his loss as just studying a surprising change.

That's because all the playable characters float like that also, I think it's to show that vergil is on the same level as you and therefore has the same properties

I can never guess what he's going to do XD. I think that Vergil saying “Interesting.” is more about him being pleasantly surprised by his son’s power and motivation.
