This instant achar is a unique instant pickle that does not require to be left in the sun for days. You can make and eat this instant pickle instantly! Carrots, radish, green chilies, ginger, find their way into this instant pickle.     Recipe:
    Instant Gajar Mooli Mirch ka Achar
    Preparation Time: 5 minutes
    Cooking Time: 5 minutes
    Serves: 4-5
    Ingredients:
    2 radishes
    2 carrots
    15 to 16 green chilli
    50g ginger
    2 tbsp mustard
    2 tbsp small mustard seeds (rai)
    12 to 15 black peppercorns
    1 tsp cumin seeds
    3 tbsp fenugreek seeds, soaked for 2 hours
    2 tbsp coriander seed
    2 tbsp fennel Seeds
    2 tsp kashmiri red chilli powder
    1 tsp turmeric powder
    1 tsp nigella seeds (kalonji)
    1 ½ cup mustard oil
    ¼ tsp asafetida
    2 tsp Salt
    3 tbsp white vinegar
    Method:
    Wash, scrap and wipe clean the carrots, radish, ginger.
    Cut carrots & radish into 2” sticks. Cut the ginger into 2” juliennes. Cut the green chilies into 2” pieces.
    Dry roast the mustard seeds, rai, cumin seeds, coriander seeds, fennel seeds till fragrant and golden in colour.
    Cool and grind to a fine powder. Add the nigella seeds, turmeric powder, red chili powder and mix well.
    Heat the mustard oil till smoking hot. Add 1 tsp salt to clarify the oil. Add the drained fenugreek seeds, stir and add the prepared vegetables. Mix well. Add the powdered spices and mix well. Cook for 3-4 minutes. Add 1 tbsp salt, vinegar and mix well.
    Remove from fire.
    Heat a coal on fire till red hot. Place the coal in a steel bowl. Add the hing over it. Cover with inverted glass jar and smoke it for 10 minutes.
    Remove the jar. Fill in the prepared pickle and store.
