Buen video amigo, se ve que esos cuchillos son lo máximo que hay… podrías decirme dónde compraste por favor, soy de Latinoamérica y me gustaría adquirir uno… muchas gracias.
Hi herman, nice to meet you, too! I never sharpened these knifes since I bought them. They are still sharp. I will soon buy some sharpening leather and try it. I will try to make a video of it, if it's possible. Some people in a forum recommended "King" whetstones for sharpening. amzn.to/3w7zMAq They are much better than cheap ones. With cheap whetstones you can damage your knife.
Are you sure that's a 13cm petty? It seemed to say 150mm on the box and doesn't look that much smaller than the 170mm santoku. I'm only asking as I have the santoku arrive tomorrow and have a 130mm petty sitting in a box as I'm undecided about the petty.
I measured it again. It's 15cm. Sorry for my mistake and confusion. I just edited in the description and added a comment to the video. Thanks for noticing!
Please don't use such a delicate knife on a bamboo cutting board! It'll dull very fast this way and maybe even chip. Use a soft wood like hinoki or an endgrain cutting board from larchwood!
Hi عاشق الاحزان, I got mine from meesterslijpers.nl. Their store is in Amsterdam, but they sent me the knifes to Germany. If you have a chance, I heard you can buy them directly in Japan a lot cheaper.
Printer paper is lame to test a knife's sharpness. Phone book paper or newspaper is much thinner and more flexible, therefore only possible to be cut with a truly sharp knife.

nice I really wanted a raw test
Thanks for uploading and showing some of test and I think you might be a chef
Thank you! I'm just a beginner home cook.
Thanks for the demos.
In the paper test you mixed the labels. The first knife is the Santoku.
The petty should be 15cm (it says 150 on the box)
Superb knives, for my part I have TAKESHI SAJI in R2.
