This is actually really cool to see that you're catching Pokemon that in not here in my area of Virginia. Clefairy are literally everywhere and I know some people on TH-cam who've never seen one. Here it's hard to find Cubone, Machop, Geodude, Doduo, and Ponyta. So Rock, Fighting, Fire, and Electric are rare here but I've caught a lot of Grass, Bug and Normal types even a quite a few Water types! Common in my area are Eevee, Clefairy, Nidoran, Psyduck, Paras, Pidgey, Spearrow, Weedle, Wurmple, (even the occasional bulbasaur).

As a heads up, you only get 500 xp for evolving a Pokemon w/o the lucky egg. With the lucky egg you receive 1k xp. The reason you are seeing a boost of 2k xp is due to the "New Pokemon" bonus, which is also 500 xp. That means, w/ the lucky egg, you are looking at [500 (evolution xp) + 500 (new pokemon xp)] *2 (lucky egg) = 2k xp. For any evolution where you already have the evolved form, you will only receive 500xp or 1k xp with the lucky egg
Just a heads up if someone already didn't know know on Pokémon Go, if the ball moves 3 times it is caught so just watch the wiggles if it doesn't wiggle 3 times it will not get caught.
I got one in a downtown park... and so did all the 1000 people next to me when we screamed LAPRAS! mine is like lvl 450 and im lvl 15, so not that good. but i've seen some over the 1000s in gyms. it all depends on when your egg pops (and what level you are). I wouldnt say its super rare. but it was a good find because i didnt have it. So anything I dont have is more rare than a lapras and I dont have a lot if that makes sense... (because we all just started so it really cant be that rare).

So side from attacks, focus on making sure you evolve those who have both high cp, but who's bat is the lowest it can be, thus equaling more greater cp for he evolved form.
Had the same CP (700ish), Yesterday. My 10Km egg hatched and I got a Snorlax. With the extra candies I level him to CP 1283. Im level 15 about to be 16 (16084 / 20K). Today I battled 3 gyms for my team (Valor) and won. Back to the Farm. Hope to be level 18 by the end of the day.

It's tragic for those (including for myself) when you live in a town that gets crap; Tucson....town is too small (even down town you find maybe 1 stop per mile) and pokemon are far and few between (I am sitting at 11 pokemon in about 5 days, this includes at my work) Also there is no water (no lake or sea at least, there are rivers but they are dried up, I haven't checked too much as the rivers are OUT THERE but I don't see water pokemon...ever)

Usually the higher level you are, the higher CP you get from Pokemon. So just keep trying to level up by getting Pokemon :)

the curve ball ONLY increase your exp but didn´t stack with great excellent etc. so it´s just harder to hit :D
