Is that because of the parasitic capacitance of the JFET (Cgs) which basically is a unremovable C? Possible to add an small shut inductor between g and s to resonate it away?

I'm sure the circuit will work fine, but he appears to be using the wrong terminology and wrong symbols. 1:30 That isn't a "bypass" capacitor, since "bypass" refers to the role of the capacitor, not the type or value of capacitor. 2:04 That is the crystal - the whole circuit is the crystal oscillator. 2:25 also not a "bypass" capacitor 3:23 wrong symbol, almost certainly not an electrolytic or other polarized capacitor. You shouldn't use a polarized capacitor there. You want something more stable, some type of ceramic capacitor for example.
