If you follow the clues its heavily implied Sparrow was a Privateer at some point (and pretty much confirmed in a deleted scene) so it would make sense somewhat for him to be intelligent as many would be given some form of formal education and he would probably have learnt some languages along the way being a travelling man so hearing another cultures native tongue would be no problem as he probably could use other languages as basis.

So, I don't know yet whether you talk about this as part 2 has yet to be released, but there's some more weight to Jack's line "Though it seems enough to condemn him"

"-One good deed is not enough to reddem a man of a lifetime of wickedness
    - But it seems enough to condemn him"
This seems in relation to what just happened (Jack saving Elisabeth), and it probably is. But it is quite deep to know that what made Jack a pirate is that he chose to liberate a haul of slaves, act that made him a criminal to the West Trade India Company.
This is further amplified in a dialogue (somehow cut from the movie, maybe not family friendly enough for Disney) between Jack and Becket in At World's End :
"-We had a deal, Jack. I contracted you to deliver cargo on my behalf, you chose to liberate it.
    -People aren't cargo mate.
-Your good deed cost me, Jack.
-And you have spared me any possibility of ending up as anything other what I am. And for that, I truly thank you."

You are used to countering all those movements and suddenly nothing moves anymore. Now I personally never walked funny because of it (although it sure feels like you are walking funny) but I've also never spent more than 1 month on a sailing vessel. How ever the reason why jacks mannerisms is so weird is because of madness caused due to heat stroke on the island he was moored at by Barbosa driving him ever so slightly mad this is spelled out by mister Gibbs when will Turner asks why he is so and if you happen to watch the 5th movie about captain slazar young jack in the flashback does not have said mannerisms which is an amazing touch to detail

The fifth one is meh for me because throughout the whole film jack is drunk and Yh he does like his rum but he is a smart man and he would never give away his compass for a bottle of rum. And it also clashes with the second film due to how jack got his compass. In dead mans chest, it was said that tia dalma gave jack the compass but in the fifth one it was given to him by his former captain🤷🏼‍♂️.

About Jack's weird walking on land: It's called "sea legs" just to throw out a term. It's what sailors call the learned ability to walk normally on a boat and shift your balance to combat the sway. It's not that hard once you get the hang of it, but does throw your walking off to suddenly transition from sea to land, as is seen with Jack.

It even gets crazier when you learn that norrington has a life dept to Jack's father long story short norrington's father who was too a navy officer came into blows with captain Teague and some point little james fell of the ship and nearly drowned but captain Teague saved him something along the lines of pirates honor james's father was not happy about (he was a hardass against pirates and did everything in his power to pass the very same mentality to his son)
