    I made this pickle. It’s AWESOME 👌👌👌. I hope it will help my inflammation too. Thanks a million chef. You are so amazing 😍.
    I added a few pieces of mango ginger also along with turmeric. The lemony flavour seeps through the turmeric and green chillies. Oh I can eat them just like that! So yummy 😋

    Sat Sri Akal BhaiJi thank you for a great & simply explained demonstration.. Greetings from a fellow Chef but I am a retired Pastry Chef living in Scandinavia. Ulu Kah Pathah from Malaysia couldn't find anywhere colder.
    So I have seen many of your demonstrations and recipes on You tube and find you are a natural and easy going manner in front of the Cameras. Have followed and tried out your recipes for our home and to the delight of our whole family we thank you.

      I do have some follow up questions,
      I add Vinegar to my Achars with the salt/ rock salt
      Recent batch - Mixed Pickles Carrots, Lemons, Ginger, Chilies,Ginger and toasted and grated lentils give it a crunchy texture.
      Shelf life - Over a year.
      As it is only My Son and I add it to our Indian dishes which btw is not everyday. So they tend to last. Not sick yet.
      Question; I notice Vinegar is not added to the recipes I have come across here and elsewhere. I realize I may be making a mistake but am I wrong or is it just a preference in India to used lime/lemon juice and salt?
      This may sound very silly to you but I am a self taught cook when it comes to home curries .... all taste the same but Well they have fed me from the late 80s.
      I recall my mum,, Sisters, Pabis making Achars and we used to end up helping to chop mango or lime. So to me it's all guess-work recalling the processes etc..
      2nd Question, I made my last batch 2x 1Litre bottles and experimented with Grapefruit especially since it has a thicker , juicier, fleshier , volume (larger fruit etc.) and it turned out great.
      Is Grapefruit dangerous for achars?
      In Malaysia the myth is If you are eating Durians, you do not have alcohol. You may end up in the hospital or even worse- dead. (Myth-fact ????) Hence my question about Grapefruit
      My achars tend to be rather strong but so far, so good.... not ambulatory yet.

      Gill S. Manjit ok the first thing achars is to add natural ingredients, like lime juice, natural vinegars to keep it natural and get the maximum benefit

      p..s I do cook all the marinated items and add the toasted spices.
      But due to the inability to obtain mustard oil, I've been using olive as a substitute . Great Regards to ur family and have a great day BhaiJi.

    I loved watching you make this recipe. I am new to Indian cooking and would like to know how you would use this recipe? Is it eaten by itself, or do you use it as a topping of some sort? Also, what does "splutter" mean? And lastly, where can I buy mustard oil, split mustard seeds and fenugreek seeds? Is Tumeric Root available in all grocery stores in the US? Thanks so much for your time answering. I would really like to make this.

      Shawnee Bigelow pickles are used in small portions along with your meal. Just like you would use your western pickle except that our portions are somewhat smaller since these are more concentrated in flavor. Splutter means the seeds pop somewhat in the pan and jump slightly. You can buy most of these ingredients in any Asian Indian store. Fresh turmeric is seasonal so you can check.

    Chef Harpal Sokhi. This would make a Perfect Christmas Gift for People. Would be fantastic for great Feasts as well with Indian foods. Perfect this would make a fantastic Indian family meal to put on side dishes with other Indian foods. This would make a fantastic Indian Party Feast. For big families and friends and for all Occasions. The great Indian feast Party. Great for new years eve Party's and new years day and Christmas Parties as well. Your recipe is just so Awesome and Perfect. Would make a Perfect gift for someone.

    Hi!
    1) You've said in the video that after seven days only, it is will be ready to eat and will taste good.
    2) You've also said that the pickle should be consumed in ten days.
    Seven days to get ready and then can keep for ten days only means only three days will be left. Hope I've understood what you were trying to say.

      Olivia 7 days as the turmeric and lime matures in that time specially the lime, although the turmeric and chillies get ready in three days but lime takes time specially if you want to consume lime with skin. And the quantity that i have made would last for 3 days for a family of four. Secondly since we have not calibrated the salt content and acid content i feel that i will not last more than 10 days..

      Yes less oil so consume fast or else it iwill spoil , the only alternative is to add more salt to preserve which i don't advice

      Aap thoda salt sprinkle karke rakhe bottom pickle dalne se phele aur badhme top pe bhi.

      Achar is matured and salt is the key preservatives so if you are making yourself you can add less salt, market wala to kam nahi ho sakta
