    Tip from a Cincinnati area guy; Should be soupy enough to ladle on, and the cheese should be finely shredded. Also, add beans for a 5 way. Coney should have mustard, and spaghetti should be served with oyster crackers and (optional) hot sauce.

      I also prefer mine "wet" or extra soupy, gives me some leftover broth(?) at the bottom to use with the leftover oyster crackers. Also gotta pre-game the meal with the classic appetizer of hot sauce on the oyster crackers. Perfection.

    I've lived in Cincy for 30 years and this is a good recipe for the chili with a few exceptions! The chili should be much more thinned out and the cheese needs to be super finely grated and probably about 3 times as much! Other than that great video

      No, Cincinnati Chili is a wet chili, which is one of the reasons it's served with oyster crackers. And you don't twirl the spaghetti on a plate of chili, you cut through it with the side of your fork and scoop it to your mouth on the fork.
      Cincinnati Chili is a whole thing, man.

    As a true Cincinnatian, I have to say you did our chili justice. Only critique would be making the chili a little thinner so it's more saucy. Just wanted to let you know that the spaghetti dish you made is called a "4-way." Sans onions is a "3-way," plus beans is a "5-way." I was hoping you'd make a Cinci chili tribute one of these days!

    I was born and raised right across the river from Cincy in Northern Kentucky. That smell you describe of the chili smelling different than what you would except is one of my favorite food smells. It's just something yummy and warm. Whenever you have a long hard day,a hangover or whatever the case this is your best bet. This mix matched bowl of ingredients will always take me home. Thanks for videos.

    I'm a Cincinnati native now living in Atlanta. I bought a can of Skyline for dinner last night! This looks great, maybe a bit heavy on the tomato, but I'll have to judge that after making it! Cincinnati chili does not have a very pronounced tomato flavor.
    And you have to get the lingo down:
    3-way: Chili, Spaghetti and Cheese
    4-way: Chili, Spaghetti and either onions or beans (4-way onion or 4-way bean)
    5-way: Chili, Spaghetti, onions and beans
    You also need hot sauce (something like franks red hot) and oyster crackers.
    Can't wait to try this recipe!

      Was gonna say that. The restaurants arent gonna put any more expensive beef onto your plate than they absolutely have to. Most of what you get at Skyline is noodles and cheese. When I make it I usually cook it down and make it thicker like Sam did.

    One more thing - if you are ever in Cincinnati and someone asks you if you want a three-way, don't get angry; all he is asking is if you want chili spaghetti and cheese. If you add either beans or onions (like Sam did), it's called a four-way; put all them together, it becomes a five-way. Absolutely delicious.

    People from Cincinnati will tell you you're eating it wrong. Since it's so different from traditional spaghetti you've gotta use your fork to cut the pasta so you can build a good bite with a bit of everything on it. The usual spaghetti spin will only end up getting you pasta because everything else will fall off in the spin.

      You need a smaller hotdog, the chili and cheese are the stars, mustard goes on it (not optional lol) it’s called a cheese coney. You can pour our chili, yours is way thicker lol. It’s a very nice interpretation ❤️ good job 👏🏾

      It triggers me when people talk negative about Skyline. It never sends me running to the bathroom. I think a lot of people just aren't chili fans in general and haven't even tried this...it's only in OH, KY, IN and down south in FL anyway lol.

    You forgot the yellow mustard on the dog! Classic Cincinnati dog goes- bun, mustard, dog, chili, onion, cheese.
    We have several versions of chilies here from skyline, goldstar, Cincinnati chili, to Dixie chili, they all have their own take and flavor profiles of which one will argue is the best. And the way we do are Spaghetti is by a 3 way, 4 way, or 5 way, and the mythical 6 way which includes a f-ton of garlic 🤔😜

      The real competition in the region is Skyline vs. Goldstar since they have the most restaurants. Never heard of a "6 way", always 3 way (chili, cheese, spaghetti), 4 way (add either red beans or onions), or 5 way (with both red beans and onions). Sam went very conservative with the cheese, which is finely shredded instead and especially in the case of the cheese coneys, you are getting a little hotdog, yellow mustard, onion, and bun with your cheese.

    Skyline or Gold Star chili in the Cincy & northern Kentucky area is family tradition. My favorite is Skyline but some will say Gold Star is their fav. If u ever come to the area I definitely recommend trying it. They call what u made a 4 way. There’s the 3-way with chili cheese & spaghetti. The 4-way has chili cheese spaghetti & onions. Then my fav is the 5-way with chili cheese spaghetti onion & beans. Then they got the coneys which are also so freaking great. I hope you get the chance to visit & try. Loved the video. Absolutely made my day. No place like home.

    Texan who married a girl from Cincy. The first time she introduced me to the stuff I was like WTF...! Then I tried it and I was a believer! It’s still hard for me to call it chili, but now our family enjoys it often!
    P.S.A. Skyline chili is slightly runnier. And that cheese has to be finely shredded, and I mean finely!!!

    So excited you did this video! Cincinnati native here. Pro tips though. When you eat a 3 way (the chili spaghetti cheese) you use the fork to cut bites, don’t twirl/mix. And you got wayyyy too fancy with the hot dog. Haha. And add mustard to the coney.

      Skyline sucks I assure you. Steak ‘n Shake has better chili. Coney Island is the best chili for chili dogs and my favorite for a 4-way. Skyline chili has a weird after taste that lingers.

      It's addicting, don't forget the onions and mustard on the chili dogs it's a must. I go for the four-way, chili, cheese, spaghetti, and onions, I add a ton of hot sauce. I usually get mine semi-inverted where they mix half of the cheese under the spaghetti so it gets nice and melted.

      @@samthecookingguy Get the real recipe. It's no where close to a mole. Its Greek Meat sauce, the same basic thing they call Coney in Detroit. It doesn't have cinnamon or cocoa.

    A resident of Southwest Ohio. When my family comes home to visit, a stop at Skyline or Gold Star is happening. This makes me very happy. The only criticisms are, more cheese more cheese, and then more cheese and never never just one dog!!!

    I am from Cincinnati and here some things you did wrong. The cheese is supposed to be shredded thinly and long. Also, never twirl the spaghetti, you should always cut it with a fork. Top the 4 way with oyster crackers and maybe Louisiana style hot sauce. The chili needs to be wetter with finally grounded beef by using a big tall pot. I always use my hands to break it up really small in the water before turning the stove on. The onions are usually never sweated/sauteed but do give it a layer of taste. It should simmer for hours.

      mustard is not required, and subtracts from the subtlety of the cinnamon, oregano, and chocolate (which should have been dutch process cocoa, not solid)

    One thing I think you’d like to know, one that’s a hell of a 3-way, 2 I don’t know for sure if Greek chili is a thing, but being a skyline delicacy, the founder was Greek, and I’ve heard people call there chili Greek style, mentioning the fact of chocolate being introduced in to it. The best thing, it doesn’t matter what you want, or how you make chili. As an Ohio native who only eats chili this way, make your best chili, load it on top of some spaghetti noodles, and throw a boat load of cheese and onion and you have “Cincinnati chili”. FYI looks delicious. Perfect coney sauce too by the way.

    Wasn't until a year ago that i realized the spaghetti and meat sauce I ate as a child was Cincinatti Chili. Which makes sense as my mother was from Dayton a stone's throw from Cincy.

    Sam, Chance and Max! Thank you so much for fulfilling my Food Wishes (see what I did there) and making Cincinnati Chili! I'm heading to Cincinnati in May for a 4-way (what you made), but in the meantime, I'll make this using your exact recipe. I love how thick you got it, which is quite different than the way it's served in the chili parlors down there. They serve it in an oval plate with oyster crackers around the rim to soak up the excess liquid. Thank you!!!

    Sam, Max, Chance - I have spent on and off maybe a couple of months in the Cincinnati area for work over the past 3 years. One of the places I enjoyed was Skyline but I never tried the "ways" or spaghetti. Always just the chili dogs. Sam your insistence on the spaghetti inspired me to make your recipe today.....and you're right. Phenomenal. I'm not really sure I want to have normal spaghetti ever again. I even have a little bowl of oyster crackers on the side just like they do in the 'nati. Thanks!

    Sam, PLEASE do a "Sonoran Hotdog" regional to Southern Arizona. Bacon wrapped Hotdog on a soft Mexican bun, with ranchito beans on top and chopped onion, avacado cremma or salsa verde and grilled chilis on the side...DO IT!

    I was so happy to see that you did a Cincinnati chili recipe. it looks delicious! 😋 Like other Cincinnatians here have said, it should be a bit thinner though. Also, and I know this is a bit controversial, but you should cut through all of the layers of the four-way, instead of twirling it like Italian spaghetti. That way, you get a bite of everything all at once. thank you for showcasing a Cincinnati tradition! 🙂. *also, hot sauce tastes great on this too. (but be sure to put it under the cheese.)

    This was like watching a beautiful half court shot rim out. So much so right, but just not there. Texture is way off. You gotta hit that chili with a stick blender. And it is absolutely not a dry chili, exactly the opposite - it's downright soupy. But the real stab through the heart was twist of the fork. That's how we identify out of towners. One simply doesn't 'twirl' chili, you use the fork edge to cut a piece then scoop it up. But you got the spice mixture right, and I love the exposure. Good effort!

    OMG! You finally did my suggestion! A few things though. Cincy chili is a lot more saucy, the cheese needs to be shredded much more finely, the dog and bun need to be smaller, and you forgot the mustard on the dog. The more saucy chili works better on both the ways and the coney to coat everything, along with finer cheese. And you forgot the hot sauce. If you don't have Skyline's blend, a few splashes of Tabasco will work. Thanks guys!

    Growing up in Cincinnati, I ate this stuff every week. The only thing you are missing is the crumbled oyster crackers over the cheese on the spaghetti. All Cincinnati chili parlors I know of serve their meals with oyster crackers. For the chili dog, go with a small hot dog (and add mustard) so you get more of the chili and cheese and less dog. In Cincy, they use small dogs served on steamed buns. Lastly, double the cheese if you want to be really authentic. Living in Dallas now, I just might have to make this recipe over the weekend.

    Love this! Kentuckian here and I grew up with the Cincinnati style chili. We live in NC now, but whenever I’m back in town I get a ton of chili packets so I can cook it at home. Love this recipe just in case I don’t have access to the chili packets. Squirt some yellow mustard on that dog underneath the chili & cheese and it’ll take it up to an Outstanding, I promise!

    I was born and raised in Cincinnati and we ate this chili at least once a week. We then moved to Florida and we had to order the Chili Packets from amazon because stores don't sell it down here. The chili really should be runnier though - not as thick as your video showed. Also if you go to a Cincinnati Chili parlor, the hot dogs are much smaller and the buns are never toasted. Then load them with the chili, cheese, onion and you eat it with a fork - it's too messy with your hands. Thanks so much for making this on your video - it was so much fun to watch.

    My dad is from Cincinnati and we ALWAYS always have Cincinnati Chili and Red Cream Soda and homemade ice cream for nay celebration. It’s seriously one of the best things ever !!

    In Britain we call it Worcester Sauce (pronounced sort of like wooster) not WorceseterSHIRE sauce. We drop the "shire" even if it has it on the label. Otherwise the "shire" in Worcestershire (the county) is pronounced like "sher".

      Absolutely. Any time when I’m on the road (which is a lot) and I’m in Ohio AAND I’m constipated, I head to Skyline and order 3 Coneys. Works every time.

    to do it proper 5 way for the Spaghetti you need to triple that amount of cheese and add Kidney beans. You said a lot of cheese, that was NOT a lot of cheese.

    Don't forget about the cracker bomb: you take an oyster cracker and put hot sauce on it. It's the best appetizer while you're waiting for your food, especially if you're there at 3 in the morning after a long night of drinking.....
